    My mom taught me how to cook as a kid. I start by using a ham hock in boiling water with seasonings. Take stems out, roll into fat cigar ( lol), cut into thin strips . Wash greens until no more dirt is found and get to cooking until tender. Cornbread for the pot liquor, potato salad, fried drumsticks and sweet iced tea with yams on the side, yum!!!! Maybe even have macaroni and cheese. That combination will make you take a nap, lol.

      Omg. Would love to eat dinner at your house. Unfortunately I have not made potato salad or collards. Shoot, I'm 42 yrs old but still a rookie when it comes to cooking so I ask my mom or my sisters how to make something.

    My great grandmother would dip out the pot liquor, OUT IT IN A BOWL and break up cornbread in it. YUM 😋

      Collards are good for the prostate. My father was diagnosed with prostate cancer. A lady at church told him eat Collard greens at least 3 or 4xs out of the week. No more prostate cancer, no chemo or radiation was needed.

    I learned to soak my greens in a sinkful of vinegar and cold water. Soak then rinse and repeat until there's no sand in the bottom of the sink - usually takes at least 2 soaks.

    What attracted me to your videos is your sweet spirit, professionalism, cleanliness, and just good ole-fashioned cooking. You really do make the recipes simple. My Mom taught me at age 5. It started with just helping to stir foods up while standing on my highchair. I blossomed from there and eventually learned other recipes from recipe books, other cooks, and magazines.
    That Pot Liquor is the bomb! All I would need is Cornbread and some Candied Yams!! I mainly use fresh greens when I can get them. It depends on where I am. In the South, that is not a problem. I also use Salt Pork for seasoning when I don't have bacon fat. What would be new for me is the Chicken Broth. I never saw my mother use that. I guess the Salt Pork did the trick!
    The Iodized Salt helps to prevent Thyroid disease. I learned that in Nursing School. It was discovered that people who had thyroid problems lacked Iodine in the body. Our bodies need certain minerals as well as vitamins for our health.
    Now if you are really Southern and Country you are supposed to eat that pot liquor by sopping it up with some cornbread and your fingers! 😂

    That pot liquor is where all of the seasoning and flavor settles. It is like a broth that is so good you can almost drink it. In the south we mix a little cornbread with the pot liquor.

    Co-worker introduced me to collard greens in the 80's. From a soul food place in Boston. Never looked back since. I get them every time its on a menu. Also make them myself. I use bacon. Another friend used to make them for me with chicken neck bones. Never thought of the turkey leg looks awesome. Found out fresh is better than frozen already chopped. Its worth the effort to make them fresh. Love your channel.

    That's how I fixed them when I lived in Florida. You can't beat the flavor. Absolutely love greens especially with barbecue. I've done it with smoked turkey legs and I've done it with the heel of the pork ribs after they've been on the grill and smoking for 3 hours.

    Don’t forget the hot sauce,I love half package of bacon diced up into squares and fried in pan in beginning of cook too, sometimes we can’t find turkey wings or drumsticks so have to use a hammock

    This old lady from NY loves collards, I cut the stem out as you did in this video. Pot liquor is the delicious liquid in the pot after the greens are cooked, loaded with flavor and the most vitamin packed of the whole pot. Yummy

    My parents had an amazing cook who made the best southern old time food. Best greens I've ever tasted. I miss her so much. I've tried and failed to cook like her until now. You have shown me how to cook close to what she made. Her love and kindness is the secret ingredient I can't replicate. Still I revel in your wonderful recipes that allow me to remember my happy childhood. I've got a pot of mustard greens and a pot of black eyed peas on the stove right now.     Pot liquor is “gold” and with cornbread, omg! I fix mine very similar (old school) with capful apple cider vinegar, crushed red pepper and little bit of raw sugar added. Thanks for the content..,… on point with everything!!!

    I have been cooking Collard Greens many years but I really like how simplified you make them. I was taught to cut the whole stem off the greens and to wash each leaf 1 at a time Thanks AB

    I cooked Camelia red beans Sunday/Monday and now midweek have my favorite treat; pot liquor. Beans and rice are almost gone but the liquid is still there. Learned from my mama the best part of the cook.

    Amazing! My grandmother taught me the about the same, except to remove stems & cut before washing in cold water & salt bath.
    But, a senior coworker and OMG she showed me how to make greens and cabbage without 🍖 meat… so good & added red pepper flakes😋
    Yesssss AB, pot liquor from the greens, so good with cornbread.

    I use the pre-chopped greens in the bags. Sometimes I use the 16 oz sometimes 32 oz. It's less work and is just as good.

    Yes, looks good. I don't do pork or beef. I do turkey leg too. Butter, chicken grease from fried chicken. I put onions ,red peppers, chicken stock little apple cider vinegar and hot sauce.😋😋

    I eat a few stems with my greens and when I was kid we would wipe the greens with a cloth and then put salt and baking soda in the water and clean them in water.
