Gumbo Style Collard Greens Ingredients
3 pounds assorted greens (i.e. kale, collards, mustard greens, turnip greens), rolled and chopped
1 cup Vegetable Oil
1 cup All Purpose Flour
2 Large Onions, chopped
1 Green Bell Pepper
3 Celery Stalks, chopped
4 Garlic Cloves
2 Bay Leaves
1 tbsp Creole Kick seasoning (can use any creole seasoning)
1 Smoked Turkey Leg, Wing or Neck (Ham hocks work too)
10 cups Chicken Stock or Water
2 - 3 Andouille Sausage (I used Chicken Andouille Sausage)
1 - 2 tsp Cayenne Pepper (optional)
1 tsp Celery Seed
1 tsp Dried Oregano
1 tbsp Garlic Powder
2 tbsp Sweet Paprika
Salt to taste

I had to stop by and see this. I am 69 years old and was born and raised in Louisiana and still live in Louisiana and have never, never heard of collard greens gumbo. Here's a tip for the stems: Take the stems and juice them, then add the juice back to the greens which will add a stronger taste to the dish.

Here in New Orleans we called this gumbo z’herbes, it is traditional served during Lent usually vegetarian but not always and we use multiple greens Kale, Turnip Greens, Mustard Greens,Collards, and Spinach

Just made this last night, and it came out SO GOOD! This one is definitely a keeper recipe. You were right about two things, letting the turkey leg boil in the chicken broth while doing other prepping, and once you've had collards like THIS ..... it's gone be hard going back to the norm. Hey, I don't want to over talk it, SMILE I just wanted to say this recipe is BOMB DIGGITTY! 😋

I started making my greens this way about 3 yrs ago and its the absolute best flavor! I also have mixed my Collard greens with Mustard and Turnip it makes an amazing pot of greens.

I make a green gumbo like this on Christmas but it has collards ,spinach,mustard greens,kale ,parsley and cabbage so good.

Hi.... Green Gumbo
1/2 lb spinach (6 cups)
1/2 lb fresh collard greens
mustard greens or kale or one 10 oz package of frozen mustard greens or kale (6 cups)
1-bunch watercress (2cups)
1-bunch parsley (2cups)
1-cup shredded cabbage
1/3 cup water
Wash all the greens thoroughly to remove sand. Drain well.
In a 4-quart Dutch oven combine greens and water.
Bring to a boiling.
Reduce heat.Cover and simmer for 12 to 15 minutes or till tender. Drain greens reserving liquid.Cut up the cooked greens. Set aside
1/2 cup all- purpose flour
1/2 cup cooking oil
In a heavy 4-quart Dutch oven stir together the flour and oil till smooth.
Cook over medium-hight heat for 5 minutes,stirring constantly. Reduce heat to medium.Cook and stir about 10 minutes more or till a reddish brown roux is
formed (the color of Carmel candy)
2 large onions,chopped
1 cup chopped green bell pepper
1 cup chopped celery
Add onions,green bell pepper and celery.
Cook and stir over medium heat 5 to 10 minutes or till vegetables are very tender.
1 1/4 lbs fully cooked ham,cut into 1/2-inch cubes
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1/4 teaspoon ground black
Add enough water to reserved cooking liquid to make 2 cups. Add water mixture, chopped greens,ham, salt, red pepper, and black pepper to onion mixture.Bring to boiling.Reduce heat cover and simmer for about 1 hour.
Serve over hot cooked rice.
Serves 6
This is a Cajun Green Gumbo with or without meat.
Tradition said that in the coming year,you would make one new friend for each green you added to the pot.
This recipe is from one of my mother's Cajun cook books.

For myself, I eat everything. When I'm cooking for my husband, I just rip the leaf away from the stem by holding the stem with my thumb and index finger, then lightly slide, with the other index and thumb, down the stem pulling the green off the stem. Like you'd do removing the leaves from a rosemary stem. It's super fast and you can move through 3lbs of greens in about 5 or so minutes. Thank you for your awesome video and I can't wait to give this an honest coonass try. Yum!

WOW! That pot of greens is everything! The look on your face was priceless when you tasted them. I’m definitely going to try this recipe. I cut my collards exactly the same way as taught to me by my mother and grandmother. To speed up the process, I put about 3 leaves on top of each other, then cut along side the stem on both sides and then cross wise at the top of the stem and discard.
The dish looks delicious. I have never heard of gumbo collard greens. Maybe one day I will try this recipe.

Hey AB! I made this I wasn’t able to follow your recipe 100% but did the best I could with what I had. Had a quarter pound or so of good bacon a nice red onion some plabano peppers so that all went into the pot. I had some good ham stock I had made up earlier and I cleaned and cut up the collards just like you. Made roux with the bacon drippings and a big piece of butter. Seasoned it up pretty close to how you did, I tend to have a pretty heavy hand. Turned out great! Thanks for the inspiration you are one of my favorite cooks!
