This is a showstopping recipe for the big game, tailgating, or your own backyard barbecue with friends and we will make it together!
It might seem daunting, but with my step by step recipe video, it's really quite easy. I will share some hacks like where to find the biggest jalapeno peppers and how to deseed them super fast! I'll also show you how I wrap the bacon to make sure that the filling never weeps out while smoking.
Today we're using a big, beautiful Texas smoker with a firebox, but usually I make these on my REC TEC pellet smoker and they come out just as delish. Our readers on Urban Cowgirl have also used an air fryer! You won't get the smokey flavor but they crisp up just like these grilled jalapeno poppers.
Also, you'll find that these are naturally keto friendly and low carb by using your own favorite sugar free barbecue sauce.
Let's have some fun at my neighborhood barbecue! Come on in and I will show you how to recreate these jalapeno poppers with ease. You'll never have leftover barbecue brisket again after you learn to make Texas Twinkies!

Texas Twinkies Recipe:
1 lbs chopped brisket from the fatty side (the point), or store bought
1 1/2 T. salt
1 1/2 T. black pepper
1 t. cumin
1 c. pepper jack cheese, freshly grated
8 oz. cream cheese
2 packages of bacon (about 24 strips)
14 extra large jalapeno peppers
Sweet Barbecue Sauce Of Your Choice
Special Tools: Toothpicks
Instructions
In a bowl or food processor (food processor is quicker), combine the cream cheese, shredded cheese, chopped brisket, and spices. Pulse several times to combine and mix well. Chill the mixture while you prepare the jalapenos.
For the jalapenos, make one cut from the stem all the way down to the tip with a sharp paring knife. Repeat with the remaining jalapenos. Over the kitchen sink, use a small spoon with a sharp edge to scrap the seeds and ribs from the pepper. Wash the seeds and ribs down the sink. Repeat with the remaining jalapenos and then wash your hands well.
Fill every jalapeno with the filling, nearly to overflowing (see photos). Prepare all the items you will need to wrap with bacon-- a cutting board and sharp knife, toothpicks, filled peppers, and bacon slices already opened and laid out for easy access.
Using the photos above as your guide wrap the bacon around the stuffed jalapenos starting at them stem and traveling around the pepper. Most peppers need 2 pieces of bacon. Secure with toothpicks and reserve. Repeat with the remaining peppers.
Preheat your smoker to 375 degrees. (We assume it would work to use an oven set to the same temperature, but we have never tested this.) Lay the peppers on the smoker. Smoke at 375 degrees for 35 minutes.
Turn the broiler of your oven on high. Place the Texas Twinkies on a cookie sheet lined with foil and coat with sweet barbecue sauce. (We recommend our Dr Pepper Barbecue Sauce or the Cherry Bourbon Barbecue Sauce on Urban Cowgirl!) Coat well and broil just for a minute until the sauce thickens and becomes sticky. Repeat if desired. Serve hot with additional barbecue sauce or a drizzle of homemade ranch dressing.

Congratulations cowgirl, another one of your videos made my playlist for recipes that I will make....you're on a roll.
Glad to hear it friend!
Omg ... this look sooo good
These look so yummy! I imagine the scent there is amazing!
They look great as all of your food does. Thanks for sharing.
Thanks yall! :)
Looks fantastic! Gotta try these. I add some Worcetershire into the cream cheese to my jalapeno poppers- wonder if that would be a good thing for this recipe. Thanks for the vid!
Those look delicious. Another way is to replace the brisket with some Pork Chorizo! They are really good as well.
Yeah, that would be really good! I love chorizo. :)
I make my traditional style. Shredded Chedar and cream cheese. But im definitely trying this way next time. Great content, just liked and subscribed. Thank you
GURL. You have done it again! The pepper jack is a wonderful addition! I usually add sharp cheese in my filling but I'm going to give pepper jack a go. Can't wait!
Use queso chihuahua that’s awesome
Nice red clay pot and plate.
Looking good.
I'll do your recipe this coming weekend.
Thanks for sharing it.
Thanks Mario! Hope it comes out tasty! Tag me on Instagram if you make them! :) @UrbanCowgirl
OMG that is amazing!!!
It’s pretty awesome!
Pride sometimes is mighty humble .
It shows only with the true Humble Ones .
They do not need pride .
I just see that here .
For Goodness sake .
Thanks for this recipe .
John you got It goin on Bud .
Awesome
I could enjoy these Any time of year! 🤠
We make them for almost all of our celebrations and get-togethers.
Once my friends and family have them, they’re a constant request!
The Urban Cowgirl, Please keep up the yummy content. I really appreciate your channel and style!
🔥🥩❤️
PortCanon thank you for saying that!! You’re always welcome here!
Nice thanks for the video
Thanks for stopping by. :)
I love that these are Keto-Friendly!!! Makes me feel good about eating a ton of them! 😂😂😂
I eat Keto, too, and feel the same way! 😊 I already make Texas-style brisket. Time to up my game to Texas Twinkies! 😎
Barbeque sauce is not keto friendly
Lol. Yep
Here on the coast (SC) we use crab. Dip in Sweet Baby Ray bbq sauce and put back on grill for a few min. and serve.
That sounds delicious and I’m going to try it!
Yum!
Awesome video.
Thank you so much! Hope you get to try it. 🫶🏻
Def doing this, looks amazing 🔥🍖 we usually do alligator eggs-(ground beef shaped like eggs with jalapenos & cream cheese inside) but I gotta try this one.
OH yes! we call those armadillo eggs in Texas. I love all that stuffed ooey gooey cheese stuff.
Funny. Post Oak was the name of the street I grew up on in Texas!
😳 Post Oak was the street I lived on in 6th grade.
Thanks
Fantastic
Thank you! Cheers!
Looks delicious just subbed you
I think I'd mix some of the seeds back in for some extra kick. But dammmmnnnn those look good!
Oh yeah spread that jalapeño open girl!!
I'm trying your recipe on a weber kettle grill here in Montana this evening... indirect heat with B&B lump charcoal with Hickory. I added a smokey garlic rub and SPG mix. The blended stuffing mixture with pepper jack cheese instead of brisket chunks is an awesome idea. Going to have to smoke them for a few hours. Will be back to edit this with the outcome later:) ... the whole family gave a thumbs up! They are even better reheated the day after... the flavors come through a little more. Would like to try this again using brisket pieces floating in cream cheese since blending masks the cream cheese texture too much. Also maybe doing half jalapeños to make them smaller. Also didn't get much of an advantage smoking indirectly for 3 hours.
Thanks for all that feedback. Yes, I make them on my Rec-Tec, and they def need longer and more smoke than John's smoker in the video. I purposefully put them next to the firebox to render off some of that bacon fat and crisp them up. I also like just stirring the softened cream cheese and brisket in a bowl. What I've learned since making this video is you don't really have to use the food processor. As long as all of the ingredients are soft you can just fold them together. Well thanks B! Glad your family enjoyed them. :D - Sarah
Adding the pepperjack cheese was sooo much better than cream cheese alone. Good call.
Sometimes it works better to cut off the cap of pepper and then put it back on after stuffed. That way less cheese oozes out compared to a longer lengthwise cut. I put filling in zip log bag and cut out corner to make squeeze bag so easier to fill hollowed out pepper
Thanks Andrew!
Happy first week of October :D I died! That's how far behind I am in editing yall.
A pro tip from a Mexican American the smaller peppers usually pack the most heat the bigger ones are not as hot. I’m definitely trying these tomorrow cuz I got some leftover brisket.
Great tip! Thanks!
Mmm mmm mmm
Hi, I really loved your DIY avocado smoothie recipe. I was just about to hit ‘send’ and it closed on me. I hope you repost.. it was grand. I wish you the best with your channel.
Original comment for 🥑🥤 DIY: I’ve never been a big smoothie guy. But I gleaned some great ideas as I watched your presentation! I’ve been keto since Aug (103 pounds healthier) and my flavorite dessert/fat bomb turns out to be homemade ice cream. Maybe I’m a ‘frozen smoothie’ guy, after all?
I’ll try to make an ice cream version of this tonight! 💕 🍨
PortCanon Hi!! Something was wonky with the sound! It totally cut off my voice over so I’m reuploading it right now! Thank you! It’ll be right back up. 🥰
The Urban Cowgirl, PHEW!! You are one of my favorite channels that keeps me going on this journey and I would sincerely love to encourage you to keep putting out awesome content! 🤩😎😍
Hahaha we just call it the grocery store lol
It’s not like we got to the white grocery store lol but still love the video lol
:D I guess you are totally right. I never thought about it that way. I just mean the grocery store with the Mexican butcher and taqueria, and all the tasty stuff!
Please don't tease me... That looks so good....
:D Glad you liked it!
If your Summer Camp smelled like championship brisket, I'd really like to know which camp it was. Asking for my kiddo..
😂😂😂 It smelled like post oak bc that’s what they burned in the fire pits.
Do you make your own BBQ sauce or is there one you like to use
I love Meat Mitch if you can find it. Otherwise, Stubbs is my favorite widely available storebrand. And I think I have three different barbecue sauces on my blog that I like. My favorite is the cherry bourbon sauce! Thanks for watching. :-)
@@TheUrbanCowgirl thank you!
❤🔥❤
Can you cook them in oven if you don't have grill
Yes and also the air fryer
Why clean the seeds ? Are you afraid of a little heat ? I just found your Channel and will see if your heat levels match mine
Bob Cooney
Salt Lake City Utah
Bob, it's not the seeds, it's the white ribs ya gotta look out for! ; ) Personally, I say bring on the heat! : )
Lort have mercy now I'm hungry
Good! :)
@@TheUrbanCowgirl had it tonight and it was wonderful
Please come back
Who me? :)
Can you say SUBSCRIBED!!

Texas white snow bunny mmmmmm.
I don’t have a smoker - can I just bbq normally
Yes you can!
There better when you stuff them with shrimp
I may need to try that! I have a bacon-wrapped shrimp stuffed with cheese on the channel but it would be good with a jalapeno in there somewhere. :)
Wow! Mouth jealousy going on here!
Slapping my forehead for not ever thinking of adding brisket to the poppers..
Didn’t we all! 😉
I beSure
I be saying, that looked easy as a pie, upside down booom..
❤ Yes! I can eat my weight in those
Jalapenos mustve been super hot...her nails even changed color😜
🤣🤣🤣🤣🤣🤣
:) Shhhh! Making videos is hard!
Neighbours must love all the smoke
We constantly get asked what we're cooking and if we have leftovers! :)

I cook vegan for a lot of my clients! I do love vegan food. It's so good for your body! :) Thanks for stopping by. :D - Sarah
They are literally the same as any other ABT recipe. Just replace the meat or cheese of your choice.
I don't know what an ABT is. In Texas, they started making them at Hutchins BBQ and they have spread throughout the state as a Texas Twinkie. Thanks for stopping by!
You can ride me cowgirl style
Or we can just call it bacon wrapped chiles rellenos...swear
Chile rellenos have egg breading 🤷🏼♀️
Why do you insist on calling these Twinkies?? Do not try and reinvent the wheel with a new name..THEY ARE ABT's.. Look it up..
In Texas, these are everywhere and they are called Texas Twinkies. They are on every menu at nearly every bbq restaurant in the state, so I am def not trying to reinvent the wheel. I have never heard of an ABT. My channel mostly deals with Texas recipes so I call them what they are called here. Thanks for stopping by.
Abts use smokies. Texas twinkies use brisket.
