The Best Texas Twinkies Recipe! - Barbecued Bacon Wrapped Jalapenos - Step By Step

  • Hey yall! Today I'm showing you how we make the BEST TEXAS TWINKIES RECIPE at my own neighborhood barbecue! Texas Twinkies are a barbecued bacon wrapped jalapeno stuffed with a heavenly cream cheese and pepper jack filling that is folded with leftover barbecue brisket.

    This is a showstopping recipe for the big game, tailgating, or your own backyard barbecue with friends and we will make it together!
    It might seem daunting, but with my step by step recipe video, it's really quite easy. I will share some hacks like where to find the biggest jalapeno peppers and how to deseed them super fast! I'll also show you how I wrap the bacon to make sure that the filling never weeps out while smoking.
    Today we're using a big, beautiful Texas smoker with a firebox, but usually I make these on my REC TEC pellet smoker and they come out just as delish. Our readers on Urban Cowgirl have also used an air fryer! You won't get the smokey flavor but they crisp up just like these grilled jalapeno poppers.
    Also, you'll find that these are naturally keto friendly and low carb by using your own favorite sugar free barbecue sauce.

    Texas Twinkies Recipe:
    1 lbs chopped brisket from the fatty side (the point), or store bought
    1 1/2 T. salt
    1 1/2 T. black pepper
    1 t. cumin
    1 c. pepper jack cheese, freshly grated
    8 oz. cream cheese
    2 packages of bacon (about 24 strips)
    14 extra large jalapeno peppers
    Sweet Barbecue Sauce Of Your Choice
    Special Tools: Toothpicks
    Instructions
    In a bowl or food processor (food processor is quicker), combine the cream cheese, shredded cheese, chopped brisket, and spices. Pulse several times to combine and mix well. Chill the mixture while you prepare the jalapenos.
    For the jalapenos, make one cut from the stem all the way down to the tip with a sharp paring knife. Repeat with the remaining jalapenos. Over the kitchen sink, use a small spoon with a sharp edge to scrap the seeds and ribs from the pepper. Wash the seeds and ribs down the sink. Repeat with the remaining jalapenos and then wash your hands well.
    Fill every jalapeno with the filling, nearly to overflowing (see photos). Prepare all the items you will need to wrap with bacon-- a cutting board and sharp knife, toothpicks, filled peppers, and bacon slices already opened and laid out for easy access.
    Using the photos above as your guide wrap the bacon around the stuffed jalapenos starting at them stem and traveling around the pepper. Most peppers need 2 pieces of bacon. Secure with toothpicks and reserve. Repeat with the remaining peppers.
    Preheat your smoker to 375 degrees. (We assume it would work to use an oven set to the same temperature, but we have never tested this.) Lay the peppers on the smoker. Smoke at 375 degrees for 35 minutes.
    Turn the broiler of your oven on high. Place the Texas Twinkies on a cookie sheet lined with foil and coat with sweet barbecue sauce. (We recommend our Dr Pepper Barbecue Sauce or the Cherry Bourbon Barbecue Sauce on Urban Cowgirl!) Coat well and broil just for a minute until the sauce thickens and becomes sticky. Repeat if desired. Serve hot with additional barbecue sauce or a drizzle of homemade ranch dressing.

    Those look delicious. Another way is to replace the brisket with some Pork Chorizo! They are really good as well.

    Here on the coast (SC) we use crab. Dip in Sweet Baby Ray bbq sauce and put back on grill for a few min. and serve.

    I'm trying your recipe on a weber kettle grill here in Montana this evening... indirect heat with B&B lump charcoal with Hickory. I added a smokey garlic rub and SPG mix. The blended stuffing mixture with pepper jack cheese instead of brisket chunks is an awesome idea. Going to have to smoke them for a few hours. Will be back to edit this with the outcome later:) ... the whole family gave a thumbs up! They are even better reheated the day after... the flavors come through a little more. Would like to try this again using brisket pieces floating in cream cheese since blending masks the cream cheese texture too much. Also maybe doing half jalapeños to make them smaller. Also didn't get much of an advantage smoking indirectly for 3 hours.

      Thanks for all that feedback. Yes, I make them on my Rec-Tec, and they def need longer and more smoke than John's smoker in the video. I purposefully put them next to the firebox to render off some of that bacon fat and crisp them up. I also like just stirring the softened cream cheese and brisket in a bowl. What I've learned since making this video is you don't really have to use the food processor. As long as all of the ingredients are soft you can just fold them together. Well thanks B!     Adding the pepperjack cheese was sooo much better than cream cheese alone. Good call.
    Sometimes it works better to cut off the cap of pepper and then put it back on after stuffed. That way less cheese oozes out compared to a longer lengthwise cut. I put filling in zip log bag and cut out corner to make squeeze bag so easier to fill hollowed out pepper

    A pro tip from a Mexican American the smaller peppers usually pack the most heat the bigger ones are not as hot. I’m definitely trying these tomorrow cuz I got some leftover brisket.

      I love Meat Mitch if you can find it. Otherwise, Stubbs is my favorite widely available storebrand. And I think I have three different barbecue sauces on my blog that I like. My favorite is the cherry bourbon sauce! Thanks for watching. :-)

      In Texas, these are everywhere and they are called Texas Twinkies. They are on every menu at nearly every bbq restaurant in the state, so I am def not trying to reinvent the wheel. I have never heard of an ABT. My channel mostly deals with Texas recipes so I call them what they are called here. Thanks for stopping by.
