Would a French toast type ice cream cake work? Melt the ice cream and soak with cake. Then freeze
probably not, you kinda remove all the air out of the icecream by melting it first so that aspect would be gone (icecream without a ton of air inside it is a lot more like literal ice (because it is) than icecream), basically you'd just end up with french toast iceicle

What I've learned is that the difference between an ice cream cake and ice cream sandwich is just proportions.
