not only is it like a rock tumbler it's kind of like a washing machine!!! marinade is like the soap or detergent that you put in the washer! and the meat is like the clothes you put in the washer before you start it. (putting soap or detergent in marinade is not recommended) but you see what I mean!! 😊

@@COOKINGWITHDOUG just a quick question. How long does it take for yours to pull vacuum? I see on some videos it's takes people from anywhere between 1-3 minutes. Mine is only 20 seconds or so. Is that right?

Just bought one - gonna make some marinated steaks tomorrow for the first experiment. Always appreciate your videos (even though I came late in the game on this one). Also going to look into the sauces you mentioned. I also have way too many Ninja gadgets that I use all the time, but for buffalo chicken wings - I tend to air crisp them in light oil first while preparing the sauce on the stovetop. I then let them bask in the sauce for several minutes after to absorb the sauce but the wings still remain crunchy. They never get enough of the flavor, though. Do you think me cooking them without the marinade first to get that crunchiness then putting them in with the sauce into this machine is something worth trying, or should I just marinate them before cooking? I just want to make sure the skin is crispy. Also, bonus points on blue cheese - I love it.

I have one of these units and I really like it. The one question I do have about it though, is that event though I know first hand that it does adsorb the marinade well, but...... how about the time needed to break down the proteins? in the meat for tenderness? I use it mostly for jerky so not a huge concern for me but always a question. I typically do around 6 pounds of beef per batch. I run the tumbler for around 45 minutes then while still under vacuum, put it in the fridge overnight. (i always did a 36 hour marinade prior to owning this unit). I would like to point out to newcomers that the manual only gives you a max weight to put in it. They fail to give a minimum weight. If it is not heavy enough, the rollers will keep slipping and not rotate. when I only have smaller amounts to marinade, I add a ziplock freezer bag with water in it to add to the weight

You should do a side by side next time - one with and one without the machine but a traditional marinade machine next
I can comprehend how a flexible vacuum bag (e.g., Food Saver) when exposed to a vacuum, will saturate the meat with the marinade as the bag collapses. I am unable to understand how a rigid tumbler with a vacuum impregnates the meat, while there is so much open space remaining in the tumbler. Are there any physics-loving BBQers out there? 🤔 Doug touched on this.
