排骨 700 克
豆腐卜 100 克
冬菇 50 克
薑、紅蔥頭、蒜頭 適量
🟢調味料:
蠔油 2 湯匙
紹興酒 1 湯匙
老抽 1 湯匙
冰糖 1 小塊
鹽、熱水 適量
🟢步驟:
1️⃣ 冬菇浸軟備用。豆腐卜溫水洗淨擠乾水備用。
2️⃣排骨汆水洗淨晾乾水,煎至微黃反轉,加入薑、紅蔥頭、蒜頭,煎至兩面微黃下冬菇。
3️⃣ 加入冰糖、紹興酒、蠔油、老抽,加熱水至排骨面,小火炆45分鐘。
4️⃣ 加入適量鹽,加入豆腐卜炆5分鐘,收汁上碟。

🟢Ingredients:
Pork ribs - 700g
Fried tofu puffs - 100g
Dried shiitake mushrooms - 50g
Ginger, shallots, garlic - as needed
🟢Seasonings:
Oyster sauce - 2 tablespoons
Shaoxing wine - 1 tablespoon
Dark soy sauce - 1 tablespoon
Rock sugar - 1 small piece
Salt, hot water - as needed
🟢Cooking Directions:
1️⃣ Soak the dried shiitake mushrooms in water until soft. Rinse the fried tofu puffs with warm water and squeeze out excess water.
2️⃣ Blanch the pork ribs, wash and pat them dry. Pan fry the pork ribs until slightly brown, then flip and add ginger, shallot, and garlic until both sides are slightly brown. Add the soaked shiitake mushrooms.
3️⃣ Add rock sugar, Shaoxing wine, oyster sauce, and dark soy sauce. Add hot water until it reaches the level of the pork ribs. Simmer on low heat for 45 minutes.
4️⃣ Add salt to taste, then add the fried tofu puffs and cook for an additional 5 minutes. Thicken the sauce and serve.

Again, a very nice homestyle dish consisting of different textures 👍👍😋! I would probably add some carrots to make the dish more colorful. If I run out of Chinese cooking wine, like Shaoxing, I usually use Japanese sake or very dry sherry as a substitute.
Dried shiitake mushrooms are very expensive in the US. See www.google.com/search?q=dried+shiitake+mushrooms+costco&oq=dried+shiitake+mushroom for examples (note the weight of each package). For high-quality dried shiitake, one can easily pay upwards of USD 90.00 per pound. How expensive are they in the UK? 0:55 I can see that you have a bag with a net weight of 100 grams (product of China). I don't buy any food products from China because of safety concerns.
I don't buy any food from China when I was living in HK, but now everything your buy at Chinese supermarket are come from China, there is no choice in UK. This dried shiitake mushrooms around £2.5/pack(100g). but the quality is very bad that I never buy like this in HK.😊
