Cross contamination can lead to foodborne illnesses when these microorganisms are ingested.
    There are two main types of food cross contamination:
    Direct cross contamination: This occurs when raw or uncooked food comes into direct contact with cooked or ready-to-eat food. For example, if raw chicken juices drip onto a salad, the harmful bacteria present in the chicken can contaminate the salad.
    Indirect cross contamination: This happens when the harmful microorganisms are transferred from one surface or object to another. It can occur when utensils, cutting boards, or hands that have come into contact with raw or contaminated food are then used on other foods without proper cleaning and sanitation.
    Preventing food cross contamination is crucial to ensure food safety. Here are some measures to avoid cross contamination:
    Separate: Keep raw meat, poultry, seafood, and eggs separate from ready-to-eat foods like fruits, vegetables, and cooked foods. Use separate cutting boards, utensils, and containers for raw and cooked foods to prevent direct cross contamination.
    Clean: Thoroughly clean and sanitize all surfaces, utensils, and equipment used in food preparation. Wash cutting boards, knives, and other tools with hot, soapy water after each use, especially when switching between different food items.
    Hands: Practice good hand hygiene by washing hands with soap and water before and after handling different types of food. This helps prevent the transfer of harmful microorganisms from one food to another.
    Storage: Properly store raw meats, poultry, seafood, and eggs in sealed containers or plastic bags to prevent their juices from dripping onto other foods in the refrigerator. Place raw meats on lower shelves to prevent any possible contamination of foods below.
    Cook thoroughly: Ensure that foods, especially meats, poultry, and seafood, are cooked to the appropriate internal temperature to kill any harmful bacteria.
    Allergen separation: If there are individuals with food allergies, take extra precautions to prevent cross contamination with allergens. Keep allergenic foods separate from non-allergenic foods, and clearly label containers to avoid any confusion.
    By following these practices, you can minimize the risk of food cross contamination and promote food safety in your kitchen or food preparation area.
