  • If you love cheese enriched potatoes, you will love aligot, a classic French recipe from Aubrac.
    Have you ever broken a hollandaise sauce? Ever baked or mixed cheese into potatoes and seen the same effect-the fat from the cheese separating from the other ingredients? Well it’s scientifically impossible for that to happen with aligot because the starch that comes out of the potatoes absorbs the fats from the cream and cheese. Cooked with garlic, and the nutty flavors of Appenzeller, Gruyere, Comte, or combination thereof, these potatoes pair with any roasted meat or poultry, or traditionally, the way they do in Aubrac with sausages.

    It's amazing that he finds his passion like this. Super admirable.
    In 2016 my mother convinced me to write him a letter detailing the similar struggles him and I have had in our lives. I mailed it out, knowing it wouldn't ever go anywhere. But I grew up watching him live through his contract with the Travel Channel, and that was impactful, so it never hurt my feelings that it was never addressed. It was a pretty big regret and super cringe, and I would NEVER write a letter to a random person again, but it happened.
    Now I get to watch him touch lightly on what saved him.
    Mr. Zimmern, you may not have the bells and whistles thrust upon you anymore, but your personality and cooking still inspires the rest of us to keep going.

    Just found your channel. Loved the videos on knives, so much good info. I grew up learning to cook from my mom and she put onions in with potatoes. They just melt away. So good.

    Looks fantastic🤤, but I'm pretty sure your ratio is wrong. Shouldn't the cheese cream and butter be a bit higher?🤣🤣🤣

    I made this immediately after watching as part of our dinner. I didn’t have cream and used milk, and happened to have Gouda so used that. Hard to stop eating.

    Instead of boiling your potatoes pressure cook them. Boiling removes much of the “potato” flavor because they’re submerged in water.
