  • Welcome to another addition of Whetstone Wars. We have another great battle. Two of the top champions going to head to head. As always, I am once again surprised by the outcome. I don't even try to guess anymore. Thank you for joining in and supporting us. These whetstones are a fan favorite as well as the peoples choice. Both of these are top performers.
    Shapton Kuromaku Professional Stones

    Shapton is serious about calling these Professional stones. Hard working professional sharpeners need stones that they can rely on. Stones that sharpen fast and well without wasting time. The Kuromaku Professional stones do just that.
    Splash and Go - The Kuromaku stones do not absorb water like many other water stones do. This means that there is no soaking required prior to using them. Get them wet, and start sharpening. No time spent waiting for them to saturate.
    Fast Cutting - Kuromaku Professional stones sharpen fast. In our tests, they are among the fasting cutting of water stones. Whether you are sharpening for yourself or for a customer, they are perfect for getting an edge sharp, and getting it back to work.

    The Debado MD Stones offer splash-and-go convenience and the better shape holding characteristics that go with this harder stone format. The Debado stones are made with Suehiro's ceramic process, similar to their Cerax soaking stone line, but a bit harder for better wear resistance. They do form a slurry and offer good feedback.

    At approximately 8-13/16" long x 3-1/2"wide (225mm x 90mm), Suehiro's Debado MD Stones have more surface area to work with than most other water stones.
    This additional working area of the Debado MD Stones means sharpening large knives without feeling cramped on a small stone surface. And that extra width allows more blade to contact the stone at one time, making them perfect for knives with long, straight cutting edges.
    The extra large size is also useful for woodworkers. 3-1/2" of width means there is no worry about a plane blade being too wide for the Debado MD stones, and the almost 9 inches of length means plenty of room for a honing guide.
    The 200 grit and the 1000 grit are approximately 1-1/16" (~27-28mm) thick. The 4000 grit stone is approximately 15/16" (~24-25mm) thick.

    Nice video! One addend... There is a difference in particle size (approximately):
    Kuromaku - 15 microns;
    Suehiro - 12 microns.
    In terms of grits the Kuromaku would be a Suehiro 800, and the Suehiro a Kuromaku 1500. Both they are great stones! 😎

      There is definately a difference in gits one notices. As usual, same grit with for example Shapton is coarser than Suehiro while Naniwa tend to be finer yet.
      That makes buying stoned difficult if you want a perticular grit and have not tried those out. If you need a set with range of grits, that makes perhaps much less difference.

      The Shapton stones (Glass and Kuromaku) has a "specific grit". King, Suehiro and Naniwa are attacheds in "JIS R 6001" specification.
      Naniwa stones have the best interval selection of your grain particles, while King stones have a poor selection.
      If you need a conversion grit table search for "gritomatic grit chart" in google (YT block external links, but this is displayed at the first lines of search).
      They have a big conversion table with several brands: stones, sand papers, componds, and other abrasives...
      Forgive my poor english. This is not my native language.

      @@leonidasmalta Comparision charts indeed exist.
      Sometimes particle size distribution can be good thing too. For example my King 1k hyper can make nice matte finish when used muddy. Most 1k stones don't do that.

    The Shapton 1k and Chosera 600 grit are hands down neck and neck the best synthetics by far in that 1k category , however the Suehiro 1k has size advantage but not as fun to work with. my Suehiro is always sitting on the bench, not a first stringer. lol
    LOVE YOUR VIDEOS! BTW the NL-8 and NL-10 are best used with stones over 2k, because they don't rough up the courser stones enough to express their true cutting action. I prefer using my Atoma 140 grit for sub 2k lapping because it brings out the best in their cut-ability.. I never use my NL-10 on sub 2K stones for that reason. Stay Sharp!🤙

    Nice! The shapton is not a true 1000 grit, it's actually in the range of 600grit, you will notice if you put the knives under the microscope. The Sharpton 2000 is more like a 1000grit. It's so strange grit seizing varies from brand to brand. I always enjoy your videos. 👍

    Hey. Thank you for the upload and love your videos as usual. Sharpening is such a niche community and your content is always exceptional and consistent. I know you guys have been working hard to get the footage recorded, you did seem really tired here. We appreciate the content as always, make sure you don't push yourself too hard to get it out as the quality is excellent and we are more than happy to wait.
    I have recently ordered a debado 1k large version and am looking forward to testing it out and seeing if it can dethrone my favourite chosera 800. Did you find the atoma was able to sufficiently flatten it? I know the stone is wider than the atoma.

      You know, we record these so late in the evening on Sundays because we're waiting for the sun to go down so it doesn't come in through the lines behind me. We've already had a long day and so I apologize for yawning even though I'm actually into it sometimes my body says you've been awake for a long time.     Shapton Glass 500 vs Naniwa Pro 600 vs Shapton Pro 1000. In my experience these are all great stones that I would categorize in the 700-800 range.

      When I talked to Hap and Stanley about it when you work for the company, he really did wish they would keep Moore in line with everyone else is ratings. They chose to be a little bit more aggressive on purpose.

    That was interesting to see what other think of those.
    I find them so different. Kuromaku has a bit sandy feel, is a bit coarser and it cuts pretty quicky, s&g. Debado is slower (even a bit slow) in cutting speed, s&g more or less. Both have very clear feedback but Debado has only a bit of Suehiro "grabbiness" and somewhat silky feel. Much less grabby than Cerax 1010 (soaker).
    I'd take Shapton glass stone or Kuromaku when I need the maximum speed/maximum material removal. I always tend to like style of feedback Suehiros have and prefer it for knives way more. However, I think the suehiro s&g versions (debado 1k and 4k) are not up to same level as Cerax 1010 or even Cerax/Cerax new.
    As always, either one gets the job done well (although Kuromaku will have more like an 800 finish while Debado is more like 1k). Suehiro will take longer time though.
    I was surprised by the result. I would have guessed a 1k beats 800 equivalent.
    I'm a Suehiro fan too but s&g debados just aren't the best of Suehiros, unless you really need s&g or do just a light touch up.

      I was surprised at the result. Yes the other one runs courser, but you still thought you might've got a better Edge. You are correct that the Suehiro has that grabbiness that you were talking about. I'm with you on everything you said my friend

      But, like in all tests, results could differ from one knife to another. At least I find some stones so great for one steel and not so much for another.

    Just a quick FYI,
    Paper pages have a grain structure.
    Cutting horizontally, vs vertically will determine how easily the knife can cut smoothly through paper.
    Cutting across the narrower side of the page (horizontally) is usually harder, as you cut across the grain.

    In your estimation what would you say the Shapton grit actually is in comparison to other brands?

    I have a Viking strop and Beavercraft strop, I prefer the Viking for the same reason, in that it is a harder leather. The quality of the BeaverCraft is much better, the wooden paddle has a better finish but the leather is thicker and spongy

      I definitely want to. We don't have any right now. the one I own in the glass series is the 10K or the 12 K so we'll have to get on that at some point

    I love watching your videos. I have a criticism for you. Your lapel microphone is adding your breathing badly to the sound of the video. It makes me extremely uncomfortable while watching. Using a sound filter or positioning your lapel microphone further away or not using it at all may give better results. Thanks.

    why cut paper with a kitchen knife????? Cut a tomato, a pepper, chicken, meat. When sharpening wood tools, demonstrate it on wood.
    A kitchen knife is for cutting food, not magazine sheets.
    Apart from that I like your videos
