    wow great video I use the single basket 9 gram and I did exactly the way you mentioned for years now and it's always been spot on giving me the best results I'd love to buy one of your books as I've never experimented with the big baskets following that same method 👏👊😍

    Mine is 20g in 46 out in 30. This close to the recommended recipe from the roaster. Works well

      That’s a longer volume in a shorter time for our beans, but if it tastes great then your on a winner, as I said all beans are roasted differently. Cheers luke

      Thanks Luke, it is a local here in Perth - Twin Peaks coffee roasters and they say between 44-48 out for 20g in 28-32 sec. Slightly over 2-1 ratio but get good feedback from this recipe and beans. Love your guys work. Would love to also try your beans one day. Big fan of your channel which has really helped me learn all things 😊

    After few years using a pod machine, I switched to a Moka Pot with fresh specialty coffee getting much better coffee. Recently I went the extra mile and rescued a 9 years old Breville espresso machine that I had at home. After watching so many videos and buying a few gadgets, I was able to get a decent espresso but the spent puck is still less than perfect, it’s a bit wet but not shaky like it was in the old days before shelving the machine. Upgraded basket is 51mm, not pressurised, I use 18g of coffee, I tried different settings from the old Sunbeam grinder varying them +/-1, puck is compact, no signs of channeling but still somehow wet. Brew takes like 16 seconds for 36 / 40 cc that seems too quick, but coffee ends with crema, velvety but a bit bitter. It has been hard to find good info for 51mm recipes. Any ideas would be be much appreciated.

    I've been trying to find a good recipe for the stock double basket (I assume 18g?) that came with my Rocket Giotto (about 14 years old). I'm grinding 19g into it and finding I get around 38g out in around 40 seconds (pretty slow) but the espresso still has a sour note. The used puck looks pretty neat to my untrained eye and knocks out easily. The beans are roasted locally and are quite fresh as far as I'm aware. What else can I tweak to try to reduce/remove this taste? Slowing down the extraction even more doesn't sound like an option.

      I'd say for a Pump on machine somewhere between 22-28 seconds is a better time. I'm using 17g in a 18g basket for lighter roasts. Medium to dark roasts have a higher volume so whenever I use a medium roast I have to dose around 15 g for it to not hit my shower screen screw.

    Great video!! Why do you put in more coffee than the basket size(19g in 18g basket, 22.5g in 21g basket)? I'm working on dialing in and learning the nuances now that I have a better grinder.

      It’s all to do with the expansion and age of your beans, this is why we put more in. Correct age coffee is very important

    Just a question if there is just a little water on top of puck after extraction is that making any difference or what is that indicative of?20 g basket with 20 grams in it.

      No, it just means your coffee puck has not expanded enough, it maybe a bit older? 🤔

    If someone wants to try a tapered basket and not spend a lot of money, try basic Gaggia double basket 14gr(actually takes easily 18-19gr)
