Authentic Nandos Hot Sauce Recipe!

- This is the PERFECT Nandos Hot Sauce recipe...and you can spice it up to whatever heat level you like! As tasty as the original Nandos hot sauce is, you are going to love this replica Nandos Hot Sauce!
Piri Piri chicken is traditionally a Portuguese dish, but Nandos is an International restaurant that originated in South Africa.
** I have been getting questions about the use of citric acid because I already use lemons in this recipe. Citric acid doesn't really have a flavour, if I used more lemons then I am adding more lemon flavour. The citric acid is adding more acid to the sauce without the extra lemon flavour...to help this sauce be safer (more acidic = more shelf stable) **
I tested the sauce with a pH meter and it came out at 4.4 so it should be shelf-stable. Test it yourself to be sure, and make sure you keep things clean during prep and cooking. I would keep it in the fridge once you start using it though!
Ingredients:
30-40 Piri Piri Peppers (you can use other birds eye, or Super Chilli)
6 Cayenne Peppers
4 Ring of Fire Peppers
1 Large White Onion
5 Cloves of garlic
1 Large Lemon (or 2 small lemons)
1/2 TBSP Salt
2 TBSP Vinegar (distilled white preferably)
1 TBSP Dried Rosemary
2 TBSP Vegetable Oil
1/2 TSP Citric Acid (optional) - geni.us/citricacid
(If you want to reduce the spice to around the Medium heat Nandos sauce, use 10 Piri Piri peppers and 1 Ring of Fire pepper.)
Blend all the ingredients together and simmer for 10-15 minutes

What for to use citric acid if you use lemon juice ? I think that’s the same. Greetings from Poznan.
Citric acid doesn't have flavour....so if you add more lemon then you are adding more lemon flavour. Which isn't a bad thing if you want it to have more lemon flavour. Like I said in the video you don't have to add citric acid, I just wanted less lemon taste in this sauce.
Also the citric acid makes the sauce more acidic so the sauce will be safer from bad bacteria and botulism etc. You could use more lemons or vinegar to make it more acidic but this will change the flavour.

That really depends on the sauce! I like a few different consistencies and densities. The salsa, chunky type sauces are good....but I also like the consistency of thinner vinegar based sauses too like Cholula, Frank's or Tabasco sauce. Or when I make a pure fermented pepper sauce, that has its own density/consistency too depending on the type of pepper. You could even use the brine after a fermentation which is almost the same consistency as water!

I made this sauce a year ago and it lasted for a whole year ... actually I finished it yesterday ... It was awesome and I came to watch the recipe once more to make it again... no regrets

Northeast USA here. I grew up in SA (1964 till 1984) and love peri peri sauce. I have been making my own for some time here now. I cannot get piri piri's though. I have to use Thai Bird's eye instead. One thing I have been doing different, is I have been roasting everything before blending it. Not sure if that is better or worse. Or the same.
One thing i know, I much prefer it to Nandos now. I have one bottle, and always compare.
Peri Peri chicken is one of my favorites. I also made Peri Peri chicken livers just the other day. Fantastic. Locals here think i am a crazy African haha. But I have converted a few to our tastes. My wife and her family loves my Durban curry, and everyone loves biltong.

To tell you the truth, I had access to fresh piri piri's when I lived in Africa, and I see no difference between them and Thai Bird's eye chilies. At least not enough so anyone would know the difference in a peri peri sauce. But one day i may try dried piri prir's. Thank you.

Lovely looking sauce..... I've made piri piri with shop bought chillies. I roasted them with garlic and the onion before making the sauce. No need to cook after and adds a lovely flavour. Just a light roast 160 for 25 min.
Roasted is good, but I imagine that would taste closer to African Rhino Peri-Peri sauce rather than Nando's.
I made it with store bought chilli's, I really didn't enjoy the vegetable grassy smell /taste to it.
I think ill roast my chillies first and put more vinegar / lemon juice into it. I prefer the nandos hot sauce I can't get enough. I find it hard to replicate it exactly.

I stumble across Nando's sauces in grocery stores on occasion or I can order them online. They do have locations across Canada, on the US east coast and some around Chicago but nothing in the western US.

After watching this, I looked around at my grocery store and yes, we do indeed have access to Nando's here in the states. At least here in North Texas. Great sauce and I might try growing some piri piri next year to give this recipe a whirl.

For this particular sauce, when you do the cook, are you holding it at a particular temperature for any particular duration to pasteurize the sauce? Or is it mostly pH / salinity that is doing the work? Thank you, and I look forward to your future videos!
Hi Fred...no particular heat, just get it to a simmer...this would mean that it is at or around 100'C. This is mostly to "cook" the sauce as well as reduce it a little. The acidity is meant to help with the preservation and safety of the sauce. However for added safety you can cook the sauce at a higher heat for about 10 minutes for added safety
