►INGREDIENTS
►For the Peri Peri Chicken and Peri Peri Marinade
►Dry Brining/Salting
1.5 kg whole chicken
1 tsp salt
1 tsp black pepper
►Peri Peri Marinade
1 small onion
7 garlic cloves
1 lemon
7 peri peri chilies
2 mexican serrano chilies
1 tbsp tomato paste
1.5 tbsp paprika
1 tbsp oregano
2 tsp sugar
2 tsp salt
2 tbsp vinegar
5 tbsp water
7 tbsp oil
►For the Spicy Rice
1 onion
5 garlic cloves
1 tomato
1 red pepper
1 green pepper
3 whole chilies
7 tbsp oil
2 tsp red chilli powder
1 tsp cumin
2 tsp paprika
1 tsp turmeric
Salt to taste
2.5 cups water
2 cups basmati rice (Soak in water 30 min)
Fresh lemon juice
►For the Olives
1 cup olives
15g coriander
10g chives
1 tbsp
1 tbsp honey
Serve with some of the coleslaw as well • SMASH BURGER with CHEE...

Assalam Alaikum Halal Chef. May Allah subhanahu wa tala bless you. I made this chicken today. The taste was amazing. I added lime and a few of them. It lifted the taste to another level. My 5 year old daughter is a fussy eater. Even she ate quite a bit. I brined the chicken in salt and pepper overnight and 6 in the morning I marinated the chicken in perishable peri marinade. This looks incredible i'm so impressed! Could you please do more videos on different marinades that can be used with chicken? I really struggle to find good chicken marinades as I only use the natural herbs and spices as opposed to the ones with maltodextrin like 'chargrilled chicken seasoning' or 'buffalo chicken seasoning'.

I made this recipe. I used smoked paprika and instead of citric acid wich i did not have, i did put lemon fruit salt. OMG it was amazing...so delicious super tender. Only thing what i should not had done was put too much of the marinade (second time) on the chicken (it will burn). Making it again soon. Thank you chef.

I just cooked this for dinner tonight chicken and rice it was really good i followed every steps and it wasn’t dry. The only thing I change was the serreno I got kids so I only added 1 serreno and no birds I didn’t have any on hand. it came out really delicious.
