Chocolate Peppermint Chia Pudding - Done in 5 Minutes!

- Who doesn’t love a great chocolate pudding!? This one is healthy AND delicious … and is super simple to make!
Chocolate Peppermint Chia Pudding Recipe
Ingredients:
- 200 ml peppermint tea, cooled
- 2-3 pitted dates (adjust to taste)
- 1 tablespoon cocoa powder or cacao powder
- 2 tablespoons chia seeds
1. Make 200 ml of peppermint tea and allow it to cool. You can prepare this in advance or use leftover tea.
2. In a blender, pour the cooled peppermint tea.
- Add 2-3 pitted dates for natural sweetness. Adjust the quantity based on your preference. Dates add a caramel-like flavor.
3. Incorporate 1 tablespoon of cocoa powder or cacao powder into the blender. Choose the one you prefer - raw or processed.
4. *Chia Seeds for Omega-3s:*
- Add 2 tablespoons of chia seeds to the mixture. Chia seeds are rich in Omega-3s and enhance the pudding's nutritional profile.
5. Blend the mixture until it reaches a smooth consistency. This should take about 2 minutes.
6. Allow the pudding to sit for 5-10 minutes to thicken. If you prefer a thicker consistency, let it sit longer.
7. Once the pudding reaches your desired thickness, indulge in this delightful chocolate treat for breakfast or a snack.
8. Optional: Refrigerate for Later:
- If you have leftovers, you can refrigerate the pudding for later enjoyment. It makes for a delicious cold treat.

Great idea to use tea in chia pudding! That creates hundreds of additional flavor possibilities. But, does that little Tribest blender actually manage to pulverize the chia seeds?

Just made this but had to add some maple syrup as the dates weren’t sweet enough. It’s delicious though. Was the tea sweetened a bit before using in the recipe?
Perfect! The tea was not sweetened.
@@cookingwithplants I later realized I didn’t translate ml to cups very well and added too much water. Made it a 2nd time but still added maple syrup as I prefer a bit more sweetness.
A tad bit of added salt was great too. I made a big batch this week and prepped it into 1/2c containers and had it for dessert each night after dinner.
Ran out of peppermint tea and used peppermint extract. Still Delicious! Thanks again!
