- Around Milwaukee, there's an old tradition of eating #cannibal sandwiches which are composed of ground raw beef on rye bread topped with onion and salt and pepper. Also known as wild cat or tiger meat, the #sandwich is believed to be a form of steak tartare. History aside, it sounds intriguing, so let's make it! 😋

My grandma used to eat a small rolled up ball of raw hamburger when she was making hamburger patties. I remember saying ewwwe and she was acting like she didn't do anything, lol. I sure do miss her.

I was at a New Year's party in Sun Prairie (Just outside of Madison, I'm there now) first time I heard of it. Big platter of raw beef, onion pieces on top covering it, a loaf of Wonder bread on the side, just had a big ol' serving spoon in it. I wasn't brave enough to try it, even though I love carpaccio.

normal German breakfast toast 😂As a German I had more onions on my so called "Mett Brot" than raw beef 😂😂 and more raw meat than bread 😅 it's always funny to see something that's totally normal for yourself to be weird for others
I think Wisconsin was mainly settled by German people, maybe a lot of their food has a strong German influence...unfortunately, I’ve never been there myself so I can’t say 🤣

In my section of Wisconsin, we call it Yohoctus (also called gehactes or hackenpeter) and put raw egg in it too and mix the onion, salt, and pepper into it. Love it with a bit of horseradish!! Any leftovers from the party we fry fry in a pan for breakfast.
My mom eats it on a Brötchen (German bun) with brats meat, paprika powder and the onion we are from Germany 🇩🇪
My dad likes it the same way. I also enjoy eating it.

This is pretty common in Germany. Its called "Mettbrötchen" with raw pork, pepper and onions on a bun (brötchen)

we've got something similar in germany. It's called Hackepeter or Mett and is typically made with ground pork meat, onions, salt, pepper and a raw egg.

My grandmother was German.. whenever she made hamburgers.. (ground beef,egg,crackers,onions) and my uncle would always take a handful of the raw mix.

My mom (who is from Wisconsin) always tells me the story of when her Aunt and Uncle got married and they served Beef Tartare for the meal 😬😬😬 This was the only dish that was served. She said she'll never forget the HUGE pile of raw ground beef on the table sitting there all night being picked at by guests 😂😂

Born and raised in Milwaukee; my mother makes this every so often. I think there are some contributing factors: recent European immigration, and my family owned a butcher shop for example.

I've actually eaten raw beef fajita meat before, so I can pretty easily get my head around the taste of this.
The taste and texture of raw beef is definitely something, especially if you're new to the experience. It's a very intense flavor, and the chewiness of the raw meat would easily be off-putting for the squeamish. As for me, I've got a "why the heck not?" mentality and a pretty tough stomach, soooooo... 😁
Yes I can eat raw marinated thinly sliced beef it doesn't bother me as long as it's the right cut and soft.

When you use two pieces of rye bread try it with the barest smear of stoneground mustard. It gives it a different dimension of flavor and helps make it less dry. The same for the barest smear of horseradish sauce.

If you are too afraid to eat this in the original form you can get a nice thick steak, grill it to rare, (that will kill any bacteria it may have picked up on the way) and toss it in the freezer.
After a half hour it should be slightly firm. Slice it into one inch cubes and run them through the grinder. Follow the recipe from there. The USDA probably still wouldn't approve, but millions of people eat rare steaks every day and survive just fine. I'm sure you will as well.
This is a great tip! With Rae meat, the bacteria is generally on the outside, so you sear that off, and get a little bit of that nice seared meat flavor snuck in there. I'd try the recipe either way, but your suggestion sounds tastier.

Try raw kibbeh! It's a very similar Syrian dish -- finely minced raw beef or lamb, bulgur wheat, olive oil, and seasoning. You scoop it up with Syrian bread. It's super tasty!

It was back in 97’ , I was a trucker working for a company based in Wausau WI and during the super bowl that year, Green Bay played Denver. A few local guys took me up to a bar, or “tavern” as they called it, up in Chippewa Falls to watch the game and had me try “Wild Cat” not telling me what it was. I remember I wasn’t pleased but I think it was partially because I wasn’t sure what I was eating. I thought mountain lion perhaps Lol. So here I am reminiscing 22 years later and I look it up and here is your video. Thank you for letting me know 22 years later what it was I tried ! Didn't like cooked meat much but I would eat that all night.🙋Then people started getting sick from it, what a drag. Not all of it, just some. The biggest worry with ground meat being safe is the fact that it is chopped and churned up by Machinery which could be contaminated and therefore contaminate bits and pieces inside of the hunk of meat. So, by you using your own properly sanitized Machinery to grind the meat you're a lot safer then getting it commercially. I still don't think I'd want to eat raw ground beef even though I like my steak super rare!
Ground beef is far more dangerous than steak. With steak you can safely eat rare steak because the outside is the main concern and cooking that is fine. With ground beef it's obviously a concern as the parts that could make you sick are all mixed in and of course the meat grinder can be a source of germs.
Also buy USDA choice
If you could see what goes into cleaning a meat cutting room at a grocery store....it takes HOURS to clean at night and they clean it again before they cut in the AM.

it’s really delicious, believe me guys.. and NO it does not have a bad smell, and NO it’s not dangerous as long as you consume it freshly made.
German health practices for handling food are a lot stronger than the US tends to have. I had a slaughter house and meat market in the US and I would be reluctant to do that here but I would try it in Germany.

Oh man! This is the ultimate Christmas treat for me! So good! YAY! Wisconsin!!!! It is also nice with a very thin spread of soft good quality butter on the rye. My uncle would serve it with firdge pickled onions on the side as well.

When I was little in the 60's my Mom & I use to sample the hamburger before she cooked it. And I love steak tartar when it's made properly.

I just get ground sirloin from the grocery store or butcher but you have to eat it the same day you buy it! With the leftovers my mom would build them the same way then broil. I prefer them raw. As a child, Sunday dinner after church was a big fancy meal, then for Sunday night supper it was the weeks leftovers supplemented by cannibal sandwiches. Lived in a Milwaukee suburb, my mom-a Chicago transplant was introduced to the cannibal sandwich as a young bride. Ye!low onion!

Oh yes yes yes. As a native-born Wisconsinite (Beer City!) I've always eaten this on Christmas. It's a beloved yearly treat. I know that eating raw meat is not such a good idea, so my limit is one open-face eaten very slowly and savored. I figure that eating a small amount of the best quality raw ground steak that I can find is an acceptable risk for the joy of the tradition.

Finally, someone who 'gets it' outside of Wisconsin! Wisconsin butchers know to clean their grinders for this treat, and choice of onion is also a sweet white onion, too, sliced thin. People make a Xmas tree shape, cover it w/sliced onions, and have the cocktail rye bread on the platter so everyone can make their own, w/ a little spreader knife! Happy Holidays here we come!

Been eating these since I was very young. It's always fun introducing this to new people from out of state. Wisconsin really is beginning to be discovered as an American treasure. Cheese Curds, Cannibal Sandwiches, Bratwurst, etc. So much more to experience here in Wisconsin than people realize.
There is a lot of German heritage in Wisconsin, from the sounds of it. I’ve only been there once, but it was still fairly apparent.

My favorite raw beef dish hails from Ethiopian cuisine. It's called KITFO, and it features raw ground beef that is seasoned with chiles and a spiced clarified butter called niter kibbeh. It's phenomenal!
When I was 17 I was in NYC for a dance intensive and i went to dinner with some friends i had made there and we went to this fancy, French restaurant where I had unknowingly ordered a raw beef patty with some mix ins like the raw egg, herbs, chopped white onion etc. The whole menu was in French and I couldn't read any of it so I ordered "steak tartare" because the name sounded familiar and reminiscent of a "Mr. Beans" episode. When it arrived I had to man up and I told her to put all the mix-ins. I ate it all because I'm not a picky eater and then later I realized that Mr. Beans did the exact same thing in that episode I was remembering except he'd spit the food out in a lady's purse. Love you Emmy you are the actual best!

I have a friend that's a chef in an upscale restaurant in the midwest. People occasionally order steak tartare and then complain about it being raw and send it back to the kitchen wanting it to be cooked. When that happens my friend goes out to the diners table and ask them exactly how they want it prepared, he's very nice about it but he wants to get a look at who it is that wants their steak tartare cooked. Lol

Wisconsin has a large German immigrant population, and Americans respect the origin of foods. Go to an old school New York establishment and ask for a hot dog with ketchup, you will see that Americans respect the hot dog's German origin even though it was invented in America. You get mustard, you get sauerkraut, you get both, or you GTFO.

I've literally just ate one, but pork here in Germany. Bit tipsy, and lovely. Never eat it sober. It's lovely drunk with onion salt and pepper
In germany we also eat raw meat, minced on bread. With onion and Salt an pepper. Really gooood. Its called "Mett Brötchen" You can buy it in almost every bakery 👌😎

Isn’t Mett made from raw pork? I never tried it since it’s not available where I live. I only had raw beef tartare with egg and I love it 😋

I grew up in Green Bay, and my parents would make these occasionally all-year round. Ground twice through a hand-cranked grinder, dark rye, butter, a bit of horseradish, salt and pepper, and slice of white onion 😊
I grew up in Chicago in the1950’s raised by a German mother. Every Saturday we would have cannibal sandwiches for lunch. Instead of rye bread we used a crust Italian bread. LOVED IT!
In Brazil we have a similar version called Carne de Onça (Panther's Meat). It's served with onions, scallions and mustard. But I still prefer the classic steak tartare.

My great grandfather was first generation German American. His parents were from Minden and Windheim. When my grandfather was a boy he used to make him raw hamburger and onion sandwiches just like this for supper. I also enjoy this from time to time! So good!

I remember my mother eating raw ground meat all throughout her life. Like you she would just scoop out a small piece & put salt & pepper on it and ate it. I think she bought extra just so she could eat it...lol

I still do. I grew up being fed cannibal sandwiches by my German grandma, and I’ve never gotten sick from it. Raw hamburger on rye with salt and capers...

We had a metal, crank meat grinder, that would clamp into the edge of the kitchen table.
Raw scallops are beautiful, I live on the coast in Scotland and our shellfish is some of the best in the world. Sushi made with raw scallops is a treat my son has enjoyed since he was small. His friends think his massive enjoyment of raw fish is weird, but it's entirely to do with what you are brought up with as normal.

My grandparents are from Wisconsin, and they served cannibal sandwiches at their wedding reception in the early 60s. My grandma said she refused to try the sandwiches, but my grandpa liked them! I believe they served the open-faced variety.
I'm from Wisconsin and my heritage is German and Polish, and I grew up eating this for family get togethers and holidays (or any time, really). This brought back many happy memories!
