If I have 3 white wires and 3 black, do I pigtail all of the white and all of the black and then connect them to one of the screws and nothing connected to the bottom screws? Thank you

yes. you can also connect 2 pairs to side screw terminals and 1 pair into back.
or you can pigtail as u said. either one is legal/ok

What kind of tape do you use? Do you tape all the screws up?

yes, just around the sides and only electrical tape.
