Definitely one of the most curious stories about unrecognized countries was the Principality of Trinidad.
Back in the early XX century, the Trinidad Island, right between the Brazilian east-coast and the British ascension island, was not a part of any country.
The island was claimed by both Brazil and Britain, but it was barren, isolated and devoid of anything important, so no one really cared about enforcing their claims. After learning of this, an american billionaire, James Harden, had a really curious idea.
He claimed the Island as his own, called it the Principality of Trinidad and claimed to be Prince James I, of Trinidad. He started selling land on the Island, but as you can expect, no one would want to live on an island in the middle of nowhere, unrecognized by anyone and disputed between two big countries.
The whole affair was treated as a joke until the British made a deal with Brazil to pass Telegraph cables through the Island. James was furious that nobody consulted him, so when the British sailors arrived to work there, they got into conflict with the settlers.
Long story short, the British Navy kicked everyone out, and James returned to his estate in New York, where he died shortly afterwards.
That was the end of the Principality of Trinidad. After hearing what happened, Brazil demanded that Britain removed their forces from Trinidad. Britain called it bollocks, and the matter went into international court.
Britain considered the Island rightfully theirs, but Brazil didn't want another British settlement so close to It's borders. Trouble was brewing, until both accepted to hand Trinidad over to Portugal, which discovered the island in the first place.
Portugal didn't want it, though. So they offered it back to Brazil in exchange for some coffee. Brazil accepted.... And that's it. Britain got their telegraphs, Brazil got the Island and Portugal got their coffee.

In the United Nations recognition to Greeks are much favorable so the world accepted that North is occupied by Turkey and whole island is belong to Greek administration of officially called Republic of Cyprus. And how unjust is that they closed their eyes for the massacres of Muslim Turks.
