Wazwan (Kashmiri: وازٕوان [waːzɨwaːn]) is a multi-course meal in Kashmiri cuisine, the preparation of which is considered as an art and a point of pride in Kashmiri culture and identity. Almost all the dishes are meat-based using lamb or chicken with few vegetarian dishes. It is popular throughout the Kashmir. Moreover, Wazwan is also served internationally at Kashmiri food festivals and reunions.[1]

It was originally said by Amir Khusrau about India, later on Jahangir repeated it for Kashmir - It roughly translates into "If heaven is anywhere, it is here, it is here, it is here". If you have ever heard Persian (Farsi), you can recognize it by "Ast" word. Ast has its Sanskrit correspond as "Asti" which means "Existence" or "Exists". Iran itself was Aryan country. Both Persian and Sanskrit are part of Indo-Aryan or Indo-Iranian language family and hence certain words do correlate.
In my family we eat rice 2-3 times a day, very common in Bengal and rest of eastern and north eastern part of India and even in Bangladesh.

Wazwans r traditional Kashmiri dishes - based on meat. Waz means the chief cook. And it's a Kashmiri word not a Urudu words.😀 Surprised that u didn't know abt it being a Kashmiri decent! Kashmiri Wazwan is very famous in India - north of India is very much aware of it. And tourists to Kashmir always relish them. In India buffet is a 90's culture. But traditionally we love food being served individually on a table or seated on floor. Our marriage treats r served with minimum of 15 + variety of food items. Imagine a Hindu 3 day marriage, how much food, snacks, drinks r served and none of the items will be repeated! 😀

well let me update people here about the kashmiri weddings if they have some confusion..
WAZWAAN is the term used for the collective of all the dishes. It depends on your budget how many dishes you want to put in the wazwaan.
It could be 10,15,20 or 25
This was just a pre mehndi ceremony lunch , that's why there were only 4 dishes
In the main wedding event during the feast what happens is big plates called TRAMI are put in front of the guests. 4 people eat in one TRAMI
Kashmiri rice which is very different from normal punjabi , bengali and tamil nadu rice is put into that trami for people . Basically that rice is much thicker , tastier and it has more nutrient content because it's grown in the mountains.
and then wazwaan is served on the rice.
Now everybody knows that this much food which is served can not be eaten in single shift
So then it is packed for the guests to take that home

Here,without going in for detail, I would like to inform that in Wazwan dishes are prepared using sheep meat in Muslim community function where as goat meat is used in Kashmiri Pandits functions and rest most of the dishes remain the same. Is it not very interesting.

16:12 Wazwan is a Dish. Actually Kashmir is known for it. Pakistani Punjab has many Kashmiri families, including yours, but your disconnect with Kashmiri Culture is quite surprising.
However, its personal choice of families how they bring themselves and their kids. Many Indian Families living in overseas since many generations like the West Indians, British Indians, American Indians, Fiji and Mauritius Indians maintain the connect, while some of first-second generation Overseas Indians severe the connect. It varies family-to-family. Possible that some of Pak Punjabis who are from Kashmir might be knowing several such things.

Nice. We make Wazwan at least a month by getting whole lamp in US. Their is bit difference in preparation of Wazwan by Muslims and Pandits. Pandits avoid onions, garlic and ginger in Wazwan and make with a Kashmiri Masala. Kashmiri Hakk is like saag but is not Saraso ka saag. My favorite in Wazwan is Kabbargah (Tabhnat by Muslims), Rista, Ghostaba, Rohan Josh and many more.

“Waz” means cook/chef nd “Wan” means shop ...it is a multi-course kashmiri meal. It is an art how it is prepared and served....”wazas” who cook nd serve these hav been doin it for generations...nd most influential kashmiri families hav their fixed wazas who prepare the meal on every occasion of the family. Wazwan restaurants are common in srinagar.
I hav attended single dish marriage functions in Lahore....but its never a single dish...minimum three were there and commonly 3 main dishes and one sweet dish....i last attended a marriage in 2007, it was of one of our family friend’s son nd it was in Model Town Main park...it had six dishes....nd the dialogue which every guest is always waiting to hear....”Roti khul gayyi j”
