Hey lad, italian guy here, studying to become a barista. I'd like to give you some tips on making a good caffè, I don't know if you're even interested, but I'll write them anyway: when you are making an espresso, the extraction should last 25 seconds, for 25ml of product, to get the right espresso. If you get those white circles on the creme of the espresso, then you've left in contact with water for too long. If you like a coffee that as a lot of flavour, I suggest making a "ristretto": 20 seconds of extraction, for 20ml of product; it has less caffeine and tastes better! Then there is the "lungo" which is 30 seconds for 30ml pf product, it tastes worse but it has more caffeine, so it will keep you up for longer, if that's what you like. Saluti from Italia! ☕
That machine uses a pressurized portafilter, your values are not accurate for his case
The values I've been taught are valid for a machine that seems to work in the same way as his, with the only difference being that the machine he is using has a portafilter that's used for making two espressi at once, by putting one cup for one "mouth" of the machine. A similar approach is also usable for the typical moka that we use in Italia. I might be wrong of course, I'm still studying.
cheap machines use a pressurized portafilter and work at 15 bars of pressure, they produce a 'fake' espresso, you should be using\learning with a non-pressurized portafilter and a machine that works at 9 bar in school, you can google the differences to understand it better

I can confirm as a barista (9 years and counting) and an owner of a cheap delonghi they do not make "proper" espresso without some hardware modifications, a decent grinder and having to "temperature surf" to get the right ballpark for temp and pressure. If you have the time and patience and need a hobby it's good fun but if you just want espresso save up for something better.

Ditch that flimsy plastic tamper scoop and invest in a metal tamper (your machine's portafilter uses a 51mm size tamper), doesn't cost much and it'll make the overall experience much easier. How fine your coffee grinds are also plays a large role as well, if the grinds are too coarse than the coffee delivery will always be too light even if you tamper very hard. Either way, I think its great you got yourself an espresso machine. Very cool that you made a video about this, cheers!

The most important part in an espresso set up is the grinder. Never cheap out on a grinder. Welcome to the espresso world.
that is what i like about cooking, there is a structure and some formulas that work, but between them you can try things. i like mastering things like making rice rolls or sourdough bread first, and when i can i get to play around to see what suits me. i like learning i guess and learning the science or ideas behind a skill. like why do we fold the dough instead of kneading, whats the difference. it's an ongoing process that i can totally be invested in at times.

Been watching your channel for years and always enjoyed the coffee videos. Excited to see your journey into espresso. I work as a software engineer now but worked at Starbucks about 6 years ago where I definitely developed a love for making coffee. It's become my morning ritual grinding the beans and making pour over coffee. We also have a Nespresso machine and milk frother so I've been making my wife lattes in the morning as well lately.

Largely thanks to your videos my interest in pour over coffee grew quite rapidly (I'm not even a regular coffee drinker) and the whole ritual including all the dishes is quite calming. I only make it when I have time to do it properly, maybe experiment a bit and clean up afterwards. As opposed to a cup of bag tea I just....boil and pour. (Advanced tea brewing, now that is on a future menu)
And thanks to all this, I just recently starting looking at espresso machines and general knowledge I guess...what a coincidence.
Wow really profound. I think that this is a very important approach to life. The process is so much more interesting than the end product. I think for me ive gotten in the headspace of trying to achieve the end product too much, like if you think about school. Like one may focus too much on the grades but its more important to actually be passionate and delve into the aspect of getting exciting to learn

Why did i find your channel just now?? I do love coffee. For me there is this ritual of drinking a big hot mug full of coffee after lunch and enjoy it for about 1h with some jazz mostly. I will try the discord too^^
I have one of those machine myself, it's amazing! If you want to re-create an italian espresso you should try arabica coffee beans, avoid dark roast, and grind the beans finer that you would for your filter/pour on coffee. How fine you need to go is a trial and error process.
A finer grind results in more surface of contact between the coffee and the hot water, that is crucial for espresso as the time of extraction is much shorter than a filter/pour on coffe.

Your 'Making Coffee' videos are my favourite of all your output. Thanks for bringing it back. Have you tried the Aeropress? There are some incredibly interesting ways to use this wonderful device to make very different coffee experiences. Also, since it is so portable it would make a great coffee maker for your Brompton bicycle adventures.

It can be a challenging task to have a large variety of personal interests on a single channel. It's something I'd personally like to try myself, because its so refreshing!

I've always wanted to get into grinding my own coffee beans making ever since I started to watch you..... but where do I start?
Dont try to poor in more then half the cup in an expresso. You can do it, but the quality of thr cofe will usually drop when u get past 1/3 if the cut, if you reach above 2/3 you will be drinking wht we call it "durty watter" or "socks coffe".
So in short, the shortest the expresso is, the tastier and stronger it gets.
in contrys like Portugal we drink it quite strong, most outsiders cant usually drink half a cup of expresso.

If you can't afford an actual machine you can get a Moka pot. Lot's of people use it because a espresso machine is too expensive.

Would recommend you look into a Rancilio Silvia or used Gaggia as the next step. Both of those machines are very fun to learn and use, and will put out good espresso if you learn how to use them appropriately. And make sure you get a good grinder!
yeah I've heard good things about Gaggia. I've been enjoying the espressos with this machine but yeah, not a lot of flexibility so hopefully one day I can try out a more versatile machine

I can't start the day without a coffee! It's become a ritual as well with the process of making it, I've got a burr grinder and get excited when I hear the beans grinding and it smells so good. I haven't had a day without coffee for ages, not sure what would happen If I stopped drinking coffee, probably would get very grumpy the whole day.
Have you tried the game called Coffee Talk? You might like it only played the demo, being a barista was fun might get the full game at some point.

Now your going to want to buy a Gaggia classic pro, then OPV mod it.. then PID mod it... then pressure gauge mod it... then buy a real grinder, then buy a bottomless portafilter, then yea, you will end up with good espresso.
