The doll on the string went into the box at the end of the track that the cheetah ran past just as it started braking. The trainer is waiting past that box with the food reward.

That cheetah is doing that because he wants to, not because he has to. Just like the other animals at zoos, it's completely up to him on what he wants to do. He knows that he is rewarded for his running, which almost never happens if he lived in the wild.
Not that the Cheetah has much of a choice, but who are you to say the Cheetah would be better off in the wild? "Living life in the wild" is hell for anyone that knows better, but the Cheetah is none the wiser. Secondly, you can't "enslave" an animal, at least not in the sense a human can be enslaved. For example, you can't threaten an animal with death to make them behave. That being said you can treat an animal cruelly like you would a slave, but I do not see that kind of treatment in this video.
