Haven't used a Cast Iron Skillet but I absolutely love my Steak cooked over the coals on a grill or even Dirty straight on the coals. I love that smokey taste in them.

I hadn't cooked on a fire grill in a while and last weekend I got to using the same cut. It was delicious and I really enjoyed the "crust" too. I think part of it is the enjoyment I get from using a wood fire is the dynamics of so many parts all at the same time, instead of just turning the knob to 1\2 way.

Even at home I use a cast iron skillet to cook a steak as it provides a good sear. Never called it a 'Crust' until seeing this video. Great video, thanks for sharing.

Hi there, from Shreveport, Louisiana. Here in the dirty south, us true southerner's love our cast iron, but we take grilling serious. Nothing can compare to the taste of wood, charcoal, or lump charcoal. (Gas grills are for the lazy!) For flavor or smoke we use many types of woods; hickory, mesquite, pecan, apple, etc. So mainly we leave the cast iron for inside, the grill for grilling. And we love grilling & smoking everything; meat, pork, chicken, veggies, fruits & seafood. We're all a lil bit crazy, and we love good food.
Such a good cook up. We cooked on a fire grill last night too and definitely prefer it. “Crust”

Can't go wrong with a good quality steak. Especially when your out bush without a shower and covered in a bit of crust!

Such a good comparison for a weekend trip I take minimal just a grill for a fire and longer trips I take a cast iron set. It definitely makes a different crust each way you cook

Cast iron is good for crust and straight on for taste, learnt something tonight thanks. cant beat a good steak and a delica of course. looking forward to seeing more about the drive.
I rarely use my skillet, except for eggs occasionally. Bacon, pork shoulder and steaks I tend to cook over coals. The crackling crust of roast oink is amazing.
Would definitely have enjoyed eating both of those, but would hate having to judge the difference.
I guess the quality of the "crust", is about the best way to go about it.

Just cooked a rib eye last night over the fire for the camp and everyone was blown away with how good it was. The flavour the fire gives it was unreal and the CRUST was next level 👌
I am used to cooking over coals at a lower heat but will add a bit of flame next time to improve the crust!

I love a little bit of dried onion flakes along with the salt’n pepper for seasoning. Flavour melts into the meat when cooking it either way, but best on a solid platform like the skillet or on bbq as the flakes get pushed into the crust. Try it!
The crust on your Fire to Fork book on sale at the Fitzroy Crossing visitor centre 2 days ago was gathering dust! I thought I'd buy the crusty copy but I already have one! Makes a useful present for a chef I know though!
Can't say I've ever cooked a steak on an open fire but this has got me wanting to now... Never thought about the crust on a steak when eating it either, but will be now.
I find the crust from cooking over the fire better than with cast iron and better flavour as well.

Stinking hot cast iron pan is absolutely the way to go to get a great crust. I was taught a few years ago a way to cook steak that is bound to start arguments but it works for me. A Hot cast iron or BBQ plate is needed and this works for any liking but blue. Steak on the pan, blood to the top, flip, blood to the top = rare. Flip, pink juice to the top = medium rare. Flip, clear to the top = medium and any number of flips after that = well done to burnt. Give it a try. Love your work and looking forward to your North to South episodes in the Delica. Keep up the great work.

Having the Delica in the background is the crust to your bread. Man those steaks are something else.....I love a good iron pan cook up, must try open wood flame soon.
Definitely going to be trying Steak on the open fire now, just to experiment getting that great 'Crust'. I get it how I like it in the kitchen but can never get it just right and I think this will be the game changer!

I had roo meat cooked by an indigenous elder, it was cooked on the coals, no grid, no s&p till ready, just relied on the crust, the meat was rare to blue but so tender, amazing

I like the thought of straight over flame, but feel the cast iron allows a bit more control over heat. Would be interested to see a cast iron vs coals and minimal flame comparison. What would be better and have the top crust.

We only cook with cast iron at home on the stove. So when ever I get the chance to cook directly over flames I do. As it is a slightly different eating experience. But both produce a quality meal.

I have been spending a lot of time trying to prefect the crust on all the stakes I cook and now I am not sure if I should be using open fire or stick with the pan
I always use a cheap light non stick pan . And yes i get it red hot before cooking. Im sure it doesnt taste as good as steaks cooked on open fire or cast iron. But after a dozen tins i like to cook simple
I can see clearly now that this video has cleared the crust from my eyes. It's a win-win with either option.

You definitely can get a crust on cast iron, that's the best way to get a crust. His pan was too hot and he flipped it too often for it to develop a crust.

The best steaks I’ve had come from having it covered when cooking under charcoal ie. Cobb cooker or Weber kettle
Recently did some big reverse sears on the hotplate like you used, moved off the fire a bit shoveled coals under, by far the best steaks ive cooked, proper fire is king for cooking
Open fire all the way, sear it on the flame and move it to the side till evenly cooked or reverse sear . Cast iron is great for even heat distribution and less hot spots during cooking

I think this cookup has shown doesnt matter what you cook on just spend the coin on a great bit of steak and you will have an award winning "Crust" no matter what

On your way down the east coast I get the feeling you will need to stop by the ozbraai HQ to pick up supplies and do this test again to validate your Crust assessment.

After watching the crust experience i just went to my local butcher to try this myself. Perfect
