The Australian Damper/simply the easiest Quick bread

    Water, salt and flour is all you need and the method is revealed in this video.
    Damper is a traditional Australian bread made from plain white wheat flour, salt, baking powder and water, lightly mixed and baked in the coals of a campfire, either directly or within a camp oven, smaller portions was often called Johnny cakes and eaten with golden syrup and called Cockys joy.
    Ingredients make 1 loaf
    3 cups self raising wholemeal (375g)
    1 tsp salt (5g)
    1 cup water (250 ml)
    Method
    Preheat oven to 230ºC normal bake. Mix together flour and salt in a bowl and make a well in the centre.
    Add the water and working from the centre mix with your hands until combining to a dough. Turn mixture out onto a floured table and form a large round ball. Place on a lightly floured baking tray and sprinkle flour on top. Rest for 10 - 15 min. And cut a deep cross on top. Bake in a preheated 230ºC for 15 min. Then reduce oven heat to 200ºC and bake for 20 minutes or until the bread is cooked and sounds hollow when tapped at the base.
    Note: To make a richer damper, add 30g fine oatmeal and 30 g butter with the flour mix and 1 egg to the water mixture.
    To create a fruit and nut bread add 80g dates, 100g walnuts or pecans with the water.
