I make this for breakfast over campfire. Add onions and some chopped ham. I learned this from my dad whose parents escaped occupied Poland. They ate a lot of potatoes with less than is shown in this recipe. This is a traditional meal for me, which I find delicious.
When I was a kid ,sometimes my mom would grate potatoes and fry them up in a pan and we'd have them as a side dish with dinner.They were so good 👍

I make something similar but I blend the eggs, grated potatoes and the herbs and add grated mozzarella cheese before cooking it in an oiled skillet, covered for 10 minutes on each side. Delicious and much quicker 😋!!

Para los que no tiene el traductor: una tortilla comun de huevo ckn cilantro y perejil.. rayas la papa y en poco aceite fries un poco.. pones encima la mezcla del huevo y hierbas..que cocine 5 minutos luego pones queso encima y cubres con el resto de la papa rayada. Tapamy que cocine.

I would add onions and oregano (with the cilantro, which is coriander leaves).
Cilantro is cilantro and coriander is alcapate or Chinese parsley. Google it and you will see.
This is another version of the tortilla española. The difference is the potatoes are grated instead of diced.

WOW...got to try this thank you....got a tip for all when squeeseing the liguid from potatos put them in a potato ricer ,...they will not come thru the holes just the liquid ...nice & dry try it !!
Looks delicious! I add chopped little green onions (scallions) to the egg mixture before adding to the heat. The little spots of onion gives it a very nice taste as well, so does using real grated cheddar cheese VS processed cheese. . Thank you for sharing!❤️

Thank you for taking the time to share your recipes. For this one I replaced the fresh herbs with dried mixed plus dill and added 2 red onions and a large red chilli, diced. Only salt added was to the onions when I fried them before adding to the potatoes. And put under the grill to finish off. Yum yum YUM! 😊💜👍

Yo simplemente lo revuelvo en el huevo y si quiero.queso le.pongo también, igual lo hago sustituyendo la.papa por ya sea calabaza rayada zanahoria o chayote le pongo el quesito y ni cuenta se dan mis pequeños.que.estan comiendo verduritas
