  • C.S. Lewis is beloved for his Chronicles of Narnia series, but some people think his greatest work of fiction was convincing millions of American kids that they would love Turkish Delight. The confection is so delicious, he taught us in “The Lion, The Witch, and The Wardrobe,” that we would happily betray our families if only we could have a tin full of the stuff. While store-bought Turkish Delight might be disappointing, homemade Turkish Delight is a game-changer. In this video, I’ll show you how to make this sweet, chewy treat from scratch, following a recipe from Casandra Reeder’s The Geeky Chef Cookbook.

    Cookbook: The Geeky Chef Cookbook

    Recipe: Turkish Delight
    INGREDIENTS
    Oil, for greasing
    1 cup (240 ml) water
    2 tablespoons gelatin
    1¾ cups (150 g) sugar
    ¼ teaspoon citric acid
    ½ cup (50 g) pistachios, shelled and chopped
    1 teaspoon vanilla extract
    2 teaspoons rose water or other flavoring extract of your choice
    ¼ cup (25 g) confectioners' sugar
    2 tablespoons cornstarch
    Few drops food coloring (optional)
    1. Grease a 6 x 6-inch (15 × 15 cm) baking pan.
    2. Place the water in a large saucepan and sprinkle over the gelatin. Set aside until the gelatin is a little springy.
    3. Add the sugar and citric acid to the gelatin water, place the pan over a gentle heat, and stir constantly until dissolved. Bring the mixture to a boil. Boil for 15 minutes without stirring. Remove from the heat and set aside for 10 minutes.
    4. Stir in the vanilla extract, rose water, pistachios, and a few drops of food coloring (if using).
    5. Pour into the prepared pan. Leave uncovered in a cool place for
    24 hours.
    6. Sift the confectioners' sugar and cornstarch together onto a sheet of parchment paper. Turn out the set Turkish Delight onto the paper and cut into squares using a sharp knife.
    7. Toss pieces in the confectioners' sugar-cornstarch mixture so that all sides are coated. Pack the squares into airtight containers lined with parchment paper and dust with the remaining confectioners' sugar-cornstarch mixture.

    Aldi does a pomegranate turkish delight over here in the UK at xmas time, and it is my favourite, couldn't get any last xmas though so may try this recipe instead. Thanks for sharing!
