Too much burr, as burr are waste and shorten the life of the tool. You should choose which side to be very flat, then microbevel the other side after desire angle. The flat side will go straight or steer into the material while the convex side can go straight and concave cuts. You should get some Chinese natural stone.
刀子後面的凹面，也就是你說的不平整的地方，那是故意作出來的，不需要磨掉，日式的刀只要是類似的「片刃」，刀匠都會貼心的在後面故意磨出一點微凹槽，以利於磨刀的時候能將凹槽周圍平面完全貼合磨刀石。

(2)一般菜刀，用1000號
(但是，有人嫌1000號割起來不夠利，不夠爽。可以用2000號。)
一般菜刀，用1000號夠利了，夠切了。如果你磨刀技術夠好的話。
(3)要刮毛，往上，用更高的號碼(我還沒實驗成功)。至少應該要3000號。

坻石哪里凸起来拿刀磨那里就好，磨着磨着就平了，坻石最好是用下去不是修下去
