Castella cake | Very simple ingredients! Details in baking and making! Easy to follow!

  • •Ingredients: #Castella(8 inches)
    Honey 50 grams(melt it in 60ml warm water of 40-50 degrees), 1:07,
    Eggs 6(each about 60-65 grams) 1:24,
    Cream of tartar 1 gram(or lemon juice or white vinegar) 1:42,
    White granular sugar 120 grams(add it by 3 times) 1:51,
    High-protein flour 120 grams(or all-purpose flour) 3:46,
    Caster sugar 30 grams(add as we like, in the video we add 20 grams) 4:12,
    •Baking setting for oven below 80 liters: preheat the oven to upper heat 160 degrees and bottom heat 140 degrees. If we can't change the temperature separatly, then bake it with 150 degrees. Put the cake in lower layer of oven. Bake it for 10 mins. If the oven has 3 layers, just put it in bottom layer of oven. After 10 mins, reduce the temperature by 20 degrees. Cover it with baking pan or aluminum foil. Bake it for another 35 mins. In total we bake it for about 45 mins.
    •Baking setting for oven over 80 liters: if our oven is quite big like over 80liters, raise the temperature by 20 degrees. It means we bake it for 10 mins with upper heat 180 degrees and bottom heat 160 degrees. If we can't change the temperature separately, then bake it with 170 degrees. After 10 mins, reduce the temperature by 20 degrees. Of course we need to make adjustment according to the condition of oven.

    1 湯匙 (tablespoon) ~= 16克 (grams)
    1 茶匙 (teaspoon) ~= 4克 (grams)
    • 幼砂糖 Caster sugar (约等于) :
    1 杯 (metric cup) ~= 224克 (grams)
    1 湯匙 (tablespoon) ~= 18克 (grams)
    1 茶匙 (teaspoon) ~= 4克 (grams)
