INGREDIENTS:
1/2 kilo pork belly
Salt
1 piece onion
1 thumb-sized ginger
6-7 pieces finger chili (siling pangsigang)
3 cloves garlic
1/4 cup shrimp paste (ginisang bagoong alamang)
1 cup shredded coconut (kinayod na niyog)
1 1/2 cup coconut milk
Fish sauce, to taste

I tried this recipe for our lunch today ... super nasarapan ang family Ko ... however, instead of using sapal, I used dessicated coconut at nag blend talaga yung lasa ....I know it's quite late .... thank you for sharing this recipe chef! .. I already tried 5 of your other recipes and I'm looking forward to try more ...

Looks so yummy, Chef pero di ganong hot or spicy. I remember going to an Indian restaurant years ago in Seattle, WA, I can't remember the dish's name, with sarsa din, upon taking the first bite, tumulo kagad luha ko. I wonder kung ganon din ang Bicol Express, that authentic. It would be exciting to eat, given that Indian dish experience haha!

Bicolana here and we never add grated coconut to the recipe. this is not the traditional way of cooking it.

Yes. Bicol express is not a bicolano dish. It was invented in manila. Different versions of ginataan apprear in the bicol region that use the name bicol express for easy reference for the general public.
@@ChefTatung hi chef it may have not originated from bicol pero po kasi sa video niyo po you kept on saying traditional eh sa traditional po wala po talagang sapal chef. Kahit po sa recipe ni ’tita cely' na allegedly naginvent at nagpopularized ng bicol express sa malate nung 1960s.
Thanks for that clarification. Yes i guess its not a very popular version. Maybe the term traditional implied widely known, when in fact it isnt. I agree with you on that. I stand corrected. This is a little known practice of adding the grated coconut in some areas where the tinutungan is a tradition.

Tama si Chef " Simpol " Tatung hindi naman bicolano dish yan, dahil ang gumawa nyan ay si Cely Kalaw na taga Laguna na naninirahan sa Malate Manila.
Si Cely Kalaw ay may kainan na malapit sa Riles ng Tren kung saan may biyaheng Manila-Bicol (vice versa).
Nakuha ni Cely Kalaw ang pangalang Bicol Express dahil karamihan nga ng sumasakay sa Tren noon ay taga bicol na kilalang mahihilig kumain ng maanghang at kaya naman may Express dahil mabilis ang biyahe ng Tren.
Dahil dyan nabuo ang Bicol Express..... Sige kuda pa more!
