    I also use my jams and jellies to brush on top of pork roasts, flavoring ice cream shakes, and coating my stuffed jalapeno peppers!!! Definitely... thousands of uses!!!

    Just started canning meats and plain cooked hamburger was used within 2 weeks for the first time, and it came in so handy! I worked a 10 hr shift and came home to hubby sick in bed. Super quick meal ready in minutes( taco night)! Btw- can’t wait for the pineapple zucchini video. We love pineapple (canned or fresh) and you are right the prices of canned fruit just keep going up. 😉

    Yet again you have made a video that is SO useful, - not just for folks who share your general lifestyle, but for everyone who cans or freezes produce for their family, be it a family of two (like mine) or 17 (my aunt had 15 children). The trick is to assess what you have and what you've used, in order to plan more efficiently. For instance, we love to use fruit topping on many of our desserts and snacks, including ice cream, blintzes, cheesecake, French toast, pancakes etc. Buying expensive canned pie filling is not a great option for us, because we don't use it for pies and just can't use up a whole can before it gets moldy. I can fruit pie filling in tiny canning jars so we can pick whatever flavor we want and use it all in two days. I just found a recipe for hand pies, and am considering making a bunch of those in different flavors a freezing them. I just finished canning blueberry pie filling today because our local grocery outlet had cases of blueberries for five bucks a case. It is so gratifying to see all those little jars and listen to the lids click as they seal. When they had bunches of bananas for 50 cents a bunch, I made frozen chocolate covered banana pops. Each family has different preferences and needs, and can still benefit from your great advice.

      I would love to try blintzes. What a great idea to can fruit pie filling and topping in smaller jars. Do you have a favorite recipe for blintzes?

      @@foodprepguide I only made them once, and I made some mistakes when cooking the wrappers, so I didn't have enough wrappers for my filling, but they were the most delicious blintzes. I will be making them again, because they freeze nicely and taste just as good when you cook them from being frozen as they did when just made. I will send you the link to the CZcams channel I got the recipe from if I can find it. Otherwise I'll write it out for you. It might take me a couple of days because I'm so busy right now with the garden.

      be sure to mix cold water into clear gel and add it slowly stirring constantly. For blueberries, mash thoroughly before adding the clear gel so juice is nice and blue and lots of berries are squished. We had so many blueberries left over I made blueberry cobbler this morning. Yum.

    Regarding jams and jellies, we have a favorite cookie that uses strawberry preserves. So, another use - deserts.

    Totally agree on the Peas. I tried several years and just gave up. Unless your planting a field worth your not going to get what you need to survive. Not worth the space when you can buy them by the case.

      I buy the frozen ones and dehydrate them. Saves a ton of room as far as storage and too much garden space to grow more than a few for nibbling on

    Agree on peas. I still do it but it is wild! Just the shelling time! And you can get frozen peas for a bit over $1 a lb.

    My first canning project was baby carrots. They turned out good but I think I should have added a tsp of salt to bring the flavor out more.

    Great video. Having canned chicken on my shelf has been quite a blessing, but my family does not like my canned ground beef. I thought next time I can ground beef that I might try pints instead of quarts; perhaps the texture will be better.

    Yes I also can green beans and potatoes together for easy crock pot meals. I put 2 pints of the green beans and potatoes And coin sliced polish sausages or pork chops or pork steak and sometimes I put a teaspoon of beef bounlion powders . Cause I just do a small 1 quart crock pot for 2 persons. Or ground beef meat balls. Just shape the meat in balls. And I can up diced carrots and potatoes for pot pies ,shepards pie and meat ball stew. I just use my old pressure cooker for stew done in 25 minutes. Just run cold water over the top too release the pressure.

    Definitely agree on those categories. Another I love to have in my pantry is pickles. I love bread and butter pickles and kosher dills. I also love zucchini pickles and pickled banana pepper rings. To me pickled items can make a simple meal special.

    I can mandarin orange in season ... quick add to a white or yellow cake mix with three eggs and a stick of butter. Great base for a poke cake. we drizzle sweetened condensed milk over the poked holes.

    Absolutely agree. I can meatballs in broth, canned stew meat in broth, spaghetti and meat sauce, pulled pork, chicken etc
    I also can up some of my dry beans to make up baked beans in a few hours instead of the long drawn out time.
    I also can Coleslaw. We like it just in the brine. Will have to try it with the Mayonnaise.
    I would not can up the mock pineapple again. Didn't go over well.
    Most of my canning is single ingredient. Very versatile.
    Couple years ago pressure canned up the potatoes with no liquid. Absolutely would never go back. Did it in chunks and hash browns.

      Meatballs are my favorite dish to pour over anything sweet, whether a sweet chutney, left over fruit or jam with a bit of spice, adds so much to the dish. Served with mash potatoes and veg.

    I'm a new canner, and have found that when I can e.g. chilli, cottage pie meat etc. the flavours aren't right. Yet I never hear anyone talking about this in canning vids. Any advice from more experienced canners would be welcome.

      I'm not sure about the cottage pie meat, but for the chili, try adding 5-10 dark chocolate chips when you're ready to cook it (not can it). The dark chocolate helps cut the acidity and the "tin" like aftertaste that sometimes occurs with canned tomatoes.

    I have been canning for a couple of years now and I still have trouble canning any tomato products because they all have a bad after taste. I'm not sure what I do wrong. Any advice is greatly appreciated.

      What are you using as an acidifier for your tomato products? Also, do you put sugar in your tomato items? (Sugar can turn a little bitter in canned tomatoes, surprisingly.)

      @@foodprepguide I have used lemon juice and citric acid but it still doesn't taste good. I hate it because my family really loves tomatoes.

      There are also some herbs that can turn bitter during processing. Some people prefer to can plain tomato sauce and season it upon cooking to avoid any bitterness. Have you tried that?

      @@foodprepguide I have tried to can plain tomato sauce using salt and either lemon juice or citric acid. I have also tried to can homemade soup that has a tomato base and my family just doesn't like the taste. Not sure where I am going wrong because they love everything else I can. I appreciate your help but as of now I just can what I can and then add store bought tomato sauce to it when I open it. My husband has several health issues so I try to feed him food without preservatives. I really enjoy your videos and appreciate your time.

      You might try getting tattler or harvest guard lids
      They are plastic with rubber ring . I think the metal flats leach sometimes in foods like tomatoes.

      We definitely can plenty of pickles (about 52 pints a year), but they're not staples in our pantry in the sense of making meals, which is what I was focused on. I was really restraining myself in this video LOL ... I could talk about ALL the canning things, but I also didn't want to make a two-hour video. 😂 😂

      I haven't experienced that, but I've also never canned pork loin. I hope someone else chimes in to help!
