For many sounds it comes down to mixing. The original audio is almost never what you hear. Many sounds will just be the same thing done a second time to get a clearer recording. Also imagine trying to record a horse galloping without getting any unnecessary background noise or wind or static.
They dont use coconuts anymore since it cant make sound on leaves and grass in stead using rocks that sounds more like horses galloping and wprks on all terrrain

it isn't just a keyboard, it's a synthesiser, the arp 2600. look up for nice sounds.
Sometimes they also use direct take, it's much better but to save time and get a sound cleaner, they use these techniques.
