Campfire Cooking. Jalapeño and Cheese Bread Baked in a Reflector Oven. Quick French Onion Soup.

- In this video, I am out in the woods to cook up some lunch - a cheese and jalapeño bread baked next to the fire in my reflector oven and a rich French onion soup to dunk it in.
There is something very satisfying and comforting about baking in the woods and a reflector oven means you can take an easily packable flat pack oven with you on wilderness trips so you can enjoy some baked treats where ever you make camp.
I hope you enjoy the video.
Thanks for watching.
Bread Recipe (full loaf)
1lb plain flour
1lb strong bread flour
1oz salt
1oz sugar
1oz dried yeast
1pt tepid water
Mix the sugar and yeast together in a cup with some of you tepid water until it starts to foam.
Slowly pour the yeast mixture into your floured salt mix (a ziplock bag makes this much less messy).
Add the remaining water, a bit at a time until you have a dough that is firm enough to not stick to your fingers.
Kneed for 5 minutes.
Cut deep slices into the dough and place it somewhere warm to proof, a bag or cling films helps to keep it warm.
Once it has doubled in size, kneed again.
Form into whatever loaf you want and bake (reasonably hot oven or dutch oven).
Baking times vary depending on what loaf you make, but check after 30 minutes and tap the base to see if it sounds hollow.
Enjoy!
French Onion soup recipe (Sorry to any French viewers!)
1 large onion
2 sprigs Thyme
1 tbs brown sugar
A good glug of red wine
1 stock pot or cube
Water
Grated cheese
Knob of butter
Salt and Pepper
Fry the onions for around 10 minutes in the butter with the sugar and a good pinch of salt and pepper, until nicely browned and caramelised.
Deglaze the pan with red wine and bring to a boil.
Add a stock pot and around 1/2 pt water.
Add the thyme and simmer for 5-10 minutes.
Grate cheese over the top and serve with jalapeño and cheese bread.

Pure class. Better than most of us would manage in a kitchen 😊
And so far I have hardly ever heard the background noises you sometimes talk about in your vlogs.
The sounds of the vlogs are so perfect - and nice to listen to!
Some people have just got it, some dont. Theres a reason Simon has so many subscribers.
Plaited bread, onion soup … you keep raising the bar for what can be achieved on a little fire in the woods! Nice video.
I am hungry now, wow thats some lunch
You and Andy have really opened my eyes to what's possible in the wild, that bread looked incredible, nice Simon. I do enjoy when you and Andy camp together, hope this Summer and Fall we will see more of your joint collaborations. Thank you.
I thought I was safe watching this after lunch, but now here I am hungry again! Great video as always!
Amazing! Now I want to go make jalapeño cheesy bread! I’m going camping with you! Great job! 😋
There is a bakery in my community that makes a jalapeno cheddar bread which is my favorite. I'll have to stop by the bakery at lunch today and pick up a loaf. Thank you Simon for all this incredible work you do so you can share your passion with us.
That bread looked genuinely epic 😮
Oh Simon, you've made me hungry! I'm camped in the woods at 7000' in Arizona, beating the heat. Fire restrictions have just been lifted due to daily rain for the past month. So… I only have a Coleman oven, not a reflector type which appears ideal, but tomorrow I'll be baking bread over a camp fire! Thanks Simon, you're an inspiration!
Just sat watching with the latest addition to the family ingratiating him into the world of Bushcraft and Camping… He celebrated his second week in the world by kipping under a tarp in mixed weather conditions, glad to say he seemed completely unphased by it all!!! 🤣
Start him young mate! 😉👍
Had a super shit day . Feel better after watching this as I find baking therapeutic also the sound of nature . Had my mouth watering . Great video . I actually live in your neck of the woods . I’ve learned loads off you and vildmark rivers and trails . Thank you kind sir 👍🏻
Thank you! Glad the video helped! Look out for the next video - it’s a Simon and Vildmark collaboration 😁
This looks delicious 😋. Love your cooking videos, they are top notch. It's fun and relaxing to watch all your adventures. Thank you 😊
You make me want to start cooking outdoors
I appreciate this man. I'm sure many of you do as well. 👍
Your videos are always very peaceful and relaxing, thank you brother!
Yet another editing masterpiece. So free flowing and for 23 minutes I escaped.
Thank you! 🙏🏻
My favorite bread to make, Jalapeno Cheddar bread. The French onion soup looked delicious.
Oh my word! Looked positively scrumptious! Thank you, for sharing!
Wow! What a delicious looking meal you prepared. Interestingly, you and Andy just posted videos of your culinary accomplishments using the same reflector over technique. I think you two should have prepared a joint video. That way you and Andy could have eaten reflector oven baked chicken with that wonderful bread and French onion soup. Add a brewski or two or . . . and then you two would have the perfect meal! :) Great video!
Got to love any Simon Adventure and this one does not disappoint as Usual.A bit of everything with always mouth watering Camp Haute Cuisine🙏🙏🙏👍⛺️
Is there no end to your cooking skills ? Next you'll be making lobster thermidor in the woods . Another relaxing and fascinatig video . Loved that vivid green carpet of moss on the tree trunk . 🥣👌♡
Simon, I’m a new subscriber loving your Chanel, one word to describe you pal “ AMAZING “, love everything you do pal , good on ya 👋👍
You’re amazing!!!Ive never made bread at home, let alone in the woods..😉You’re wife is one lucky lady!!🥰
Yes.give Simon some tinfoil and he can cook up anything 😂
A new Simon video! I appreciate these simple videos as much as the camping/hiking/canoe adventures. They remind me to do and see new and interesting things in everyday life rather than only looking forward to the weekend.
Great video, Simon. Nice little camp lunch. The camp ovens really opens up possibilities for baking at a campfire, something most folks don't know about or really think much about.
Nice to see you enjoying the outdoors. I'm glad the rain let up for you.
God bless Simon and stay safe on your travels.
Couldn't miss it despite the jalapeno warning. Think I'm far enough away in Western Australia :) Very classy, Simon. Every video you have ever made is classy, right back to showing us your rucksack. Every one of them can be viewed over and over, and as a family, we do. Thank you for making our evenings so enjoyable.
Better than therapy. Simon, you're Genius.
I swear I could smell that cooking/baking!
Hey Simon: Hope all is well in the UK there. It’s the end of summer and this video kinda reminded me of that Soup and Bread 🥖 wonderful combination this time of year. I just enjoy when you teach us how to do things. Great video See you in your next video ❤ 🍽️🏕️
Hi simon!
I'm a fairly new subscriber, but I've seen almost all of your videos.
You have a very big heart Simon. You are a fine human being. You are very good at what you do.
I don't know if you thought about it, but first a teacher, then a carpenter. Everything leads to what you are doing now. Funny.
You don't just help people with what you do. You help them by just being you.
Keep up the good work you are doing. I will follow you as long as you post videos brother.
Lots of love from Sweden 🙏🥰✌
So true , I have learnt knots, cooking and camping watching. Great stuff
I've spent a fortune watching the man and i don't camp 🤣I have tons of Jetboil equipment sleeping bags, Olight torches.
Very fine words Sir !
Thank you so much! I can’t tell you how much that means to me! 🙏🏻🙏🏻
@@simonablokeinthewoods You deserve all the best Simon. You put your whole heart into what you do. And no matter what happens, there is a smile on the face. You do a great deal for many people 👍🤗

OHMYGOSH.... I'm coming to YOUR camp fire for lunch!! YUMMY! Thank you, Simon, for all your fine videos!
Just watched your mate Andy cook whole chicken using the same technique, your bread and his chicken both looked awesome.
No smelly vision but crunchy vision on the end, topping off a feast for the eyes and ears. Thanks for sharing Simon👍
Looks like your eating like a king out their in that beautiful English forest . I,ll have to try your recipe but I,ll wait till winter , cozy winter comfort food .
I wish this was my dinner tonight. Even better if it was in the woods!
Omg, that looked so tasty Simon, would you mind popping around to my back garden and producing the same dish please? 😂😂 Thanks so much for taking the time to film and edit all of that. Superb.
Any time mate 😁👍
I like the clear spoken communication. I'm a Kiwi and have difficulty understanding what some kiwi youtubers of similar outdoors genre are actually saying.
Awesome dude, cannot believe after all these years you're still making use of the spice kit.
Another fantastic video, cheers Col 👍🏻
I bet you can smell that food miles away. Cheers Simon for your work.
I love everything in this video, my favorite is always seeing The Simon's Saw, patent pending! In Oklahoma, we had rain almost every day back in June/July. Now it's just unbearably hot! Thank you so much for going through all this trouble for us!
Jalapeno & cheese bread - making my mouth water already! Got guests tonight so I'll put this on my 'to watch' list and can't wait to see how it's done!
Nothing better than a good lunch in the woods with Simon.Awesome

Congratulations for completing the Swedish Ranger course, Simon.
Nice cup!
Great video. There's something powerful about cooking a great meal in a wildcamp after a hard day paddling or hiking.
That looked absolutely Gorgeous! I'm going to have to try that whether I'm in the woods or not! Thanks!😋
Thank you, Simon! I will HAVE to try that bread recipe asap... Best wishes, Juliane.
Caught the Newfoundland provincial flag patch on your pack. I’m guessing as a small memorial to sweet, fuzzy Maggie ❤ It’s comforting to me to know that she is still tagging along on your adventures, if only in spirit. She is most definitely missed.
All the best Simon, from Nova Scotia 🇨🇦
-Darby
I was super stoked to see the flag patch then immediately sad because Maggie :( As a Newfoundlander and a huge dog lover, I always loved seeing her. Great video as always Simon

Superb cooking, Simon. See ya and stay safe. 👍🤓
Deglazed...that ranks pretty high on a list of words you never thought you'd hear when cooking over a campfire.
I love cooking bread with added herbs. I really enjoy parsley dough, or maybe thyme dough, but for some reason, my missus prefers it with dil!
Love the shoe....😅
