- This one-dish meal is tasty and doesn't require much preparation. The rice cooks with the pork chops making clean-up easy. I did find that it took longer to cook than my original recipe stated. On the recipe below I added that I cooked it longer. If you take it out and it looks watery just leave it longer and the rice absorbs the liquid. Add a salad and your meal is ready.

Made this tonight and used the 10oz. pkg. of rice with 2 cups of water (pkg. called for 3 cups) and 5 pork chops. Cooked for 1 1/2 hrs and came out perfect! Thank you!

1 or 2? Even if your type 2 rice is good. it’s a healthy nutritious grain. I’m type 1 and I eat it all the time. For me it’s about 30 to 45 carbs depending on the servings size and kind of rice.
@@cayden6807 I was type 2. My carb limit is 20 carbs a day. Yes, rice is tasty. But extremely high in carbs. I am no longer diabetic because I restricted the carbs in my food. But I still refuse high carb foods because I don't want to be diabetic ever again.

My chops were over cooked! I couldn't find a 5oz bag of the yellow rice. It only came in a 10oz. My fault putting in the whole bag, but I had to add what the water on the bag read. I had to cook an additional 20, which my entire bake time was an hour & 20 minutes! I think 350 is a tad too high for pork. You gotta do pork slow. But with that being said it may have been way better if I had cut the yellow rice in half and I'm sure the water content wouldn't have been as much along with not having to bake longer until all the water was absorbed! I'll try again and cut the rice in half to see if that helps! The recipe needs to have on it the oz of the yellow rice! It's a 5oz, but all it says is a small bag......
I made this rescipe tonight. Not a good outcome. It was pork chop soup. Rice was not cooked and most of liquid was not absorbed. Pork Chops were cooked but a bit chewy. I cooked the casserole for 60 minutes and let it sit for 40 minutes. I threw out the rice and liquid. I will do something else with the other 2 chops.
