If you don’t have tamarind sauce, you could use tomatoes instead. I use tomatoes to give it a sour taste and drizzle lemon over it.

The only problem I have when making pad Thai or any stir fried noodle dish, the noodles break apart when I’m stir frying. Then I’m just left with small pieces of noodles

Looks great! When you were in Vietnam I noticed you used a brand called Sandee when cooking Hainanese Chicken & Rice. When you cook a Vietnamese rice plate like Pork Chop or Grilled Pork with rice, what brand of rice do you use? I’ve tried a number of rice brands so far, but haven’t been able to find a rice that’s as fragrant and tastes as good as the rice served at Vietnamese restaurants I’ve eaten at in the US.
