    I use mason jars as well. Have a couple gallons in some 32s currently. I’ve made thousands of gallons of kombucha, and another tip on getting good carbonation is to leave a little more head space. I like to take to fill mine just above where the mason jar starts to curve in. Makes a big difference.

    We use mason jars for everything. So we are always labeling our lids. We use dry erase markers to label our lids. Unlike what you may think, dry erase markers don’t erase on the lids as easily as a whiteboard. They actually stay on and it takes a little elbow grease to wipe it off. But just a little water, and it cleans up perfect. Try that! Way better option than sharpie and nail polish remover.

    A tip for removing the sharpie marker. Nail polish remover as shown (acetone) works fine, but in a pinch, any type of alcohol will too in sufficient concentration. Iso-propyl, methanol, Everclear, anything over about 70%.

    Can I do the first fermentation on the mason jars too? does it have to be completely round ?

      yes, you can definitely do the first ferment in a mason jar.

    Hi, i’m new to your channel. I want to brew my first batch of kombucha- I do not use white sugar, I use only natural sugars like cane sugar. Have you ever used this for your brew? Thank you so much & God bless 💚

      First of all, nice to meet you Riley! :) And absolutely. I haven't had refined sugar in the house for a year or more. I use raw cane sugar or maple syrup for making kombucha. The important thing is to get your scoby accustomed--gradually!!--to the sugar source. More here: soulyrested.com/2019/10/22/how-to-make-maple-kombucha/

    Hi Michelle, I was so hoping you were going to demonstrate that plastic ball lid with that suction part. Can I do that? I'm aiming for a very carbonated beverage. And with this route, how long would you let the second fermentation go?

      I'm sorry I don't know what suction thing you're mentioning, but a simple canning lid is truly all you need. The length depends on many factors, from temp in the room to amount of added fruit/sugar, to quality of starter tea in first ferment... BUT in general I have a nice carbonation, and yummy flavor, within a few days.

    I have found rusting on the lids of my mason jars, even after one use for booch. I love mason jars, any work-arounds for that?

      I like to use the white plastic lids, but always place a canning lid (with seal) underneath, to be sure I get a tight fit (therefore good carbonation).

    Is it difficult to unscrew the mason jar metal lid after second ferment, due to the pressure inside the jar? Thanks. I'm leery about being able to easily open the jar, if I were to do this.

      typically it's no problem at all. In fact I love it that the metal lid is a great indicator of when the carbonation is to the point where you like it. I have let it sit longer than I wanted to a few times & I had to puncture the lid to relieve the pressure enough to get the rim off.

      @@MichelleVisser That is exactly what I am afraid of - having to puncture (destroy) the metal lid due to too much pressure not allowing it's removal.

      homemade kombucha can truly be as carbonated as you want it to be... I intentionally "tone it down" because I hate intense pressure on the lids making them impossible to open. But my masterclass breaks down lots of tips for increasing or decreasing the level of carbonation. :)

      @@MichelleVisser Hi Michelle, I just started learning about kombucha and I am super excited to try to make some on my own. I bought a couple bottles from Synergy and I absolutely loved it , it healed my belly so much. I watched so many videos by Donna from Cultured Food Life and listened to her podcasts, that's how I found that I could actually make kombucha. I just received/ordered a scoby from her a day ago and I bought the the fermenting vessels and the swing-top bottles and just all the necessities to begin. I am learning all I can from your channel, your videos have been an inspiration and you have such great ideas. Sharing all this wealth of knowledge about health and healing has been a life source for me and I just want to say thank you and be blessed. 🙏🏾🙏🏾🥰🧬🤗
