my beet hummus starts with roasting the beets with the garlic cloves in kosher salt and olive oil. Once the skin is off both after the roast, they have a more intense flavor. Yum.

Red beets are delicious roasted or boiled, but be aware they contain a strong red dye that looks a lot like blood in water 🚽 except a little more violet. Kinda scary ☠️ until you remember 😸. The amount you'd get from eating this hummous won't do it, but you'll eat a few beets straight if you're cooking them, because they really taste good. You can roast them in a toaster oven (on a pan, they weep).

I made this for myself as an appetizer and it was AMAZING! SO GOOD! The lemon zest and olive oil really brings out the beetroots flavor.
