Baking Basics: How to Blind Bake a Pie Crust

  • Since it is now officially summer, I wanted to make a cold pie that is not baked. In order to do that, I needed to bake the pie crust first. This is known as blind baking a pie crust. Let's talk about how to do it.
    First, you need pie crust dough. If you don't have your own recipe, here's mine.
    Pie Crust:
    1/3 cup (80g) butter
    1 cup (125g) flour
    1/4 tsp salt
    3-4 tbsp water
    Combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Toss in water a tablespoon at a time until mixture comes together in a dough. Knead briefly. Roll out on a lightly floured surface. Transfer to a pie form. Trim the dough to the edge of the pie form. Leave just a little bit extra as the dough will contract when baked. Poke holes with a knife or fork. Press a piece of baking paper into the pie crust. Fill with something dry that will not be too badly effected by baking. For example: dry peas, beans or rice. Bake at 425°F or 210°C for 15 minutes and an additional 2-3 minutes without the baking paper filling.
