I've found the "upres factor" setting can have a huge impact on the baking time in the water sims I've done. I usually stick to 1 to get an estimation of what the water will look like and then go back and put it up to 2 for a higher quality result

With the bottle selected, under the Physics tab after you've added the Fluid, look under settings. It's there.
