I think it comes down to Harrison being a regular guy, and has never let fame get to his head. He simply doesn't understand it as it is a job to him, and he doesn't like the fame that comes with it. Being treated as if he is a special celebrity all the time makes him feel awkward, or at worst annoy him, no matter if it is from fellow actors or anyone really. Ryan Gosling is just like in many ways, and really down to earth, and they share the same humor which is why they click so well.
