  • The Dalmore Whisky Distillery Single Malt Scotch with Richard Paterson www.thedalmore.com/ In this video Richard highlights the importance of maturation in the Dalmore whisky making process and a key ingredient - Time! The Dalmore emblem, the 12 pointed Royal Stag, dates back to 1263 when Colin of Kintail, Chief of the Clan Mackenzie, saved King Alexander III from the anger of a red deer stag. The King recognised this act of bravery by granting the Clan Mackenzie the freedom to use the 12 pointed Royal stag emblem on their coat of arms. The stag’s head appears on all bottles of Dalmore whisky which is created at the Dalmore Distillery near Alness, on the shores of the Cromarty Firth, north of Inverness, Scotland. The distillery was founded in 1839 by Alexander Matheson who later passed ownership to Andrew and Charles Mackenzie who brought the iconic stag emblem, the caberfeidh (Scot’s Gaelic for a stag’s antlers) with them. The distillery remained with the Mackenzie family until it was taken over by Whyte & Mackay, one of Dalmore’s key customers, in 1960. For many years Dalmore produced only a12 year old single malt but now have a Core Range of 12, 15, 18 and 25-years-old, with some no age expressions such as King Alexander III and Cigar Malt. The Dalmore has also made a name for luxury, limited edition whiskies and indeed a bottle of The Dalmore 62 sold for $200,000 in 2011. Much of the success of Dalmore is down to Master Distiller and Blender Richard Paterson aka ‘The Nose’, a legend in the industry with over 50 years of experience and expertise in the craft of making quality whiskies.
