Raspberry ricotta cake recipe - Easy Raspberry coffee cake - طريقة عمل كيكة التوت

Ricotta breakfast cake is very easy to make and the ricotta cheese will make it moist and fluffy. Perfect for tea and coffee. share cake for brunches and as an afternoon tea.
The Ingredients are simple.
Ingredients:
1/2 cup (113g) unsalted soften butter
3/4 cup (165g) sugar
2 eggs, room temperature
1 teaspoon vanilla extract or powder
pinch of salt
1 2/3 cups (250g) all purpose flour
1 1/2 spoons baking powder
1/2 teaspoon baking Soda (bicarbonate sodium)
1 cup of raspberries (or blueberries or blackberries, cherries)
250g ricotta cheese
sugar or cinnamon to top sprinkling
Method:
1. Start with preheating oven to 165C - 325 F.
2. In this recipe been used 8 inch (22 cm) diameter spring baking form. Line baking form with parchment paper.
3. First combine all dry ingredients: flour, baking powder and soda and a pinch of salt.
4. In a big bowl ( you can use a stand mixer) combine soften butter with sugar. Beat it for 2 minutes till become light and fluffy texture, add eggs, one at a time. Mix well after each egg with scraping all batter together. Add vanilla extract and combine all the ingredients well together till a smooth mixture.
5. Add by small portions flour mix and ricotta cheese to a beaten butter + sugar. Keep adding and beating the cake batter till all ingredients well incorporated.
6. Pour 2/3 of cake batter to a baking form and cover with raspberries. Add the remaining batter and cover with raspberries, gently press the raspberries into the cake. Sprinkle with sugar and bake in a medium rank for 35-45 minutes. On 165C - 325 F. Check the cake while baking with toothpick inserted in the center comes out dry.
7. Let the raspberry cake cool down before removing from form. Serve with coffee or tea, with fresh raspberries, scoop of ice cream :)
