- The best recipe for smoking tender, delicious Spare Ribs. These Malcom Style Ribs are my favorite way to cook ribs!

I’ve done a lot of great Rib recipes, but this one here is my all time favorite. I start with Spare Ribs and remove the membrane. First they get a dose of savoriness - my Killer Hogs AP Seasoning bit.ly/TheAPRub with a medium coat - and then I let that sit on the meat for 15-30 minutes.
At this point I fire up my Drum Smoker; for me you can’t beat a slab of ribs cooked on a drum - it just reminds me of true pit bbq.
I run Royal Oak Charcoal Lump in the drum. Fill the fire basket 3/4 way full and I also place a piece of aluminum foil over 1 side of the top of the basket to creates an indirect side.
Before the ribs go on the pit, I throw on a chunk of Hickory and Cherry smokerwood.com along with half a small onion.
Once the ribs begin to sweat, season each slab with Killer Hogs The BBQ Rub bit.ly/TheBBQRub - my O.G. seasoning.
When the coals are ready on the drum, adjust the vents so it runs as 275. You can cook this recipe on any pit just keep the temperature at 275 the entire cook.
Place the ribs on the cooking grate. One slabs goes directly over the hot coals and one goes over the area with aluminum foil over the basket. The ribs smoke for 2 hours and I spin the rack every 30 minutes. I also hit each slab with a spritz of water at each rotation with my BOS Sprayer bit.ly/BOSsprayer . This keeps adds moisture to the top of the ribs preventing it form drying out.
Once the ribs reach a mahogany color and the rub has set, take them off the pit and wrap in aluminum foil. In the foil I add 1/4 cup of Killer Hogs Vinegar Sauce bit.ly/TheVinegarSauce and lay the ribs meat side down. The foil is brought up and around the ribs and the ends folded up.
Place the ribs back on the pit stacked on top of each other over the aluminum foil side of the fire. The ribs need about an hour to get tender. After 30 minutes rotate them so each one spends time on the bottom. Check them at the hour wrap mark for doneness - you should see draw back on the bones, the larger bones should be exposed, and the internal temperature should be around 202 degrees.
Remove the ribs from the pit and let them vent for 10-15 minutes. To finish these Malcom Style Ribs I do them “muddy”. I use a combination of 50/50 The BBQ Sauce bit.ly/TheBBQSauce and Vinegar Sauce bit.ly/TheVinegarSauce dusted with a little The BBQ Rub bit.ly/TheBBQRub .
Combine the two sauces and lightly brush it on the top of the ribs. Then sprinkle just a touch of The BBQ Rub bit.ly/TheBBQRub over the top. The ribs go back on the pit for 10-15 minutes to set the sauce and then you’re ready to cut them up and enjoy.
Malcom Style Rib Ingredients:
- 2 slabs St Louis Cut Spare Ribs
- Killer Hogs AP Seasoning
- Killer Hogs The BBQ Rub
- 1 cup Killer Hogs Vinegar Sauce (reserve 1/2 cup for glaze)
- 1/2 cup Killer Hogs The BBQ Sauce
Directions:
1. Remove silver skin and excess fat from each slab of ribs
2. Season each slab with AP Seasoning and rest for 15 minutes
3. Prepare Drum smoker for indirect smoking at 275 degrees. Cover 1/2 of fire basket with aluminum foil. Add 1 chunk each of Hickory and Cherry wood and 1/2 small onion to hot coals before placing ribs on smoker.
4. Season the ribs with The BBQ Rub on all sides and rest for 15 minutes.
5. Place the ribs on the cooking grate and cook for 2 hours. Rotate the cooking rack every 1/2 hour so each slab has equal time over the hot coals. Also spritz each slab with water every rotation for moisture.
6. After 2 hours when the ribs have a dark, mahogany color; remove them from the smoker. 7. Lay our a piece of aluminum foil on the counter, pour 1/4 cup Vinegar Sauce across the foil and place 1 slab of ribs meat side down on the sauce. Wrap the foil around the slab and fold the ends so you can easily get back into the wrap. Repeat this step for the other slab as well.
8. Stack the ribs back on the pit on the opposite side of the fire. After 30 minutes swap the ribs around.
9. After 1 hour of cooking in the wrap carefully open the ribs and check for doneness. Internal temperature should be around 202 degrees and you should see the bones starting to expose. At this point remove the ribs from the smoker and rest for 10-15 minutes.
10. Combine 1/2 cup The BBQ Sauce and 1/2 cup Vinegar Sauce in a small bowl. Carefully place each slab or ribs on a “foil boat” and brush with the sauce mixture. Season the top of each rack with additional The BBQ Rub and return to the pit to glaze for 15 minutes.
11. Cut the ribs into individual bones and serve.

Never seen this channel, but I trusted this man's BBQ knowledge as soon as he started talking.
lmao
Big guys can sell BBQ, eh?
😂🤣
Started off watching his videos while searching for a good walkthru on how to smoke a turkey and now I turn to Malcoms videos anytime I go to smoke or grill anything basically. His videos are awesome because he is great at explaining each step where it's easy to follow and doesn't have a ton of unnecessary talking and filler. 3veryone of his recipes that I've ever tried, the food turns out phenomenal. I've learned a ton, would be awesome to pick his brain one day if I ever seen him out somewhere.
Good instincts my man, Malcolm is awesome
No fancy editing or BS, this guy just cuts to the chase every time and shows you exactly what he's doing. Love it, keep up the great work Malcom
Compared to a lot of BBQ channels, these videos are nicely edited. High quality camera, audio and a well written script. He's got the formula down pat.
@@Kriterian it's nice but subtle. Some channels try to do too much or make it pretty, not this one, no need!
@@bl9603 Also alot of channels like to skip on the tips and technics or don't give you any alternate info to make the cook easier for you or at least get you started on to enjoy doing it!
Tried this the first time and everybody loved it.
Did it a second time and everybody thought I had the event catered.
Thanks Malcolm!
What’s more impressive than his food creations is his fantastic demeanor. 👍🏻 This is the instructor I would want 👍🏻
I like when Malcolm talks to the ribs. "It's ok i'm still gonna eat ya"
Jason Beem same 🤣
That was great
That made me laugh out loud
Yup🤣😂🤣😂
Surprised he didn't say, "Get in my belly!"
"Oh you wanna come apart a lil'bit? That's ok. That's ok. I'm still gon' eatchu"

Hey man. Long time viewer. You've taught me a lot and I truly appreciate you cementing my legacy as the family pit master. I was excited to see your rub in my local Walmart neighborhood market and I just wanted to reach out and say it is phenomenal. Most store bought rubs are either too sweet or too salty. This is perfection. I also appreciate it being in a bigger than average shaker. Nothing worse than being a few shakes short. Keep it up sir.

Never fails that someone posts this comment every single video. As if they themselves read it there....
And imagine eating it every day being part of malcolms family
One time someone pointed out that his son leaked their address on Instagram. Posted a picture of a Dominos Pizza box that showed the address I think. People were checking if any houses near were for sale lol.
One day I’ll have a beer with Malcolm and let him give me life advice. He’s like your favorite uncle at the family bbq 😂
Naww he is the one cooking he always at the pit and you just get a lawn chair sit next to it because he is going to be coming back probably every 5 minutes

"I'm letting the meat sweats be the binder", is the best thing I've heard this week
@dooder well there isn't a big difference between what you use as a binder because it adds no extra flavour profile, it's only to stick the seasoning to the meat. In Malcolm's case because he used the meat sweats there is no need for him to add a coating of binder over it

I like how doesn't advertise the seasonings too hard. That makes me wanna buy them.
You could always just look at the label and mix the seasonings yourself as well. But yeah, he doesn't try to sell you stuff. He's here for the bbq
Trust me it's the bomb. It starts off a little sweet and you think the flavor profile is done, then it gives you a suttle kick at the end. His AP rub would be easy to do but not his main rub
He doesnt need to try, simply using these made me buy all of the seasonings, sauces and marinades. Guilty.
Of if bout a couple of the Killer Hogs rubs before. Really good on ribs. You have to add your own salt though.
YES! Kosmo pimps his products so hard it's not even funny, I like Malcom videos way better

Past Masters how was it?
MoeDaGreat probably the best ribs I've ever smoked
@@pastmasters9591 I did this last night. I just recently bought myself a Gateway drum. I did use different rubs and sauces simply because I'm out of Killer Hogs products at the moment. This method however is amazing. Some of the best, if not the best I've had. Cheers!
Your Vinegar sauce is THE BEST commercial sauce I've ever had. I've been smokin' for decades but your videos have taken my meats to a whole different level. Thanks you Sir.
I run our smoker with Malcoms methods. Drives the neighbors crazy so we send to-go boxes with ribs over to them. Malcoms tip of throwing a onion on the coals for aroma is amazing and finishing the neighbors off with an fantastic smell.

You are truly the KING of BBQ.
Been using the AP rub as a base rub for almost all ribs I smoke since I seen this. No need for a binder as the moisture from the meat sweat does the trick. That BBQ Rub is fantastic as well but I always like to experiment with others as well. So glad I seen this, me and my family have been loving my ribs ever since. Thanks!
Man - they look awesome. Even though I just had breakfast you made me hungry 😋.
Thanks Malcom. I tried to make ribs last weekend and ended up binning them as they were too dry. I’ll use your technique here.
Cheers
I never "square off" the ends on mine, those skinny burnt end pieces are the best part!
Its like a nice bread crust. He likes the pillowy softness of the middle while you like the crispness of the burnt part
if you cut the end off, the new end is going to be dry anyway. Just leave the end on and cook it, and then cut the end off, and it will keep it moist inside, and you have the "extra" snack
Absolutely amazing

Thanks so much Malcom! I made these ribs tonight on my Weber kettle grill and they turned out excellent. They are now my favorite way to eat ribs too! And my family loved them too!
I could listen to Malcom talk BBQ all day. Love this dude.
Thanks, Malcom! I had to adapt your ribs on the fly, but when I was done, they were as tender tissue paper! The meat just fell off of the bones. Another thing that I learned is that to have ribs for dinner I need to start the grill by 2 in the afternoon! Thanks again, brother! Keep on cooking!! :D

Looks amazing. I will try
This is probably the BEST cook on CZcams! So authentic … SUBSCRIBED!
I've kept my ribs in the cryovac package (air tight bag which they come in) in my fridge for a couple weeks which wet ages them, definitely adds to the tenderness. They may have a little sour smell out of the bag, once you rinse them with cold water all that smell disappears, I've done this 20+ times with no issues, works with steaks too. I sure do love ribs and Malcom style will be my next way to cook em.
