The MasaTaco guy used to be a very sought after sound man at clubs around Los Angeles. While here he spent a lot of time patronizing and researching the local taco truck culture and their cuisine. He returned home and started MasaTaco.

1:14:05 John, I think the long leaf stalk is called Colocasia Gigantea, the Vietnamese called them "Bạc Hà", the Vietnamese use them as vegetable in their sweet and sour soup, very popular in Vietnam. The leaves are very large and often called giant elephant ear. Cheers

28:40 This vegetable is used in a sour soup. You peel or shave the green on the stalks out and then you cut them into thin diagonal pieces and put in the soup, usually a sour fish soup.
1:14:00 That's commonly known as elephant ear stalk. Used mostly in soups as it can soak up the broth but still maintain its shape. The large leaves of this stalk resemble an ear of an elephant. In Vietnamese, it's called Bac Ha and used as an ingredient in Canh Chua.
This video clip really opens my eyes to the excellent food safety in Japan. In other parts of the world, many people still prudentially choose street food for their good health : )

Nothing like hot ginger and honey in cold weather.
They probably give the raw fish a quick dip in ascorbic acid,(vita C). That and the fact its cold and fresh helps.

omg i was randomly watching this video (i follow you but haven’t watched everything) and masacasa taco is my friend Masa’s taco stand!! I was so shocked to see it! I used to work with him when we toured with bands in america! he always made the best food and moved to japan to follow his dream. so crazy to see his stand on your channel

The sweet potato tempura is amazing. We were lucky enough to head to Kochi in February 2020 (to see a couple bands play) and the next morning was this market. I vaguely remembered the old episode about this and it was better than that video! The knife vendor where Kevin bought a knife - we got one too and it's our favourite knife!

I live in Sacramento, which is the sister city of Matsuyama. I used to live east of the city of Kochi, which is the sister city of another place in California's Central Valley: Fresno. The Sunday market is a big example of why the cities are twinned: a lot of fresh produce comes out of both of these cities' regions.

Pine nuts are edible, used to make pesto of course. In old cones they'll mostly be rotten though.

Fighting apple John. They shipped my son’s Airpods to our old address. New owner signed for it and kept them. Took me an hour to explain that was their issue. They eventually sent out replacements. In your case they broke “chain of custody”.

Unfortunately, they really muffle sounds. Since John was holding the camera, I often couldn't get close enough to the mic.
