Down here in the deep south, that stand up 'funky' rack has a cut open soda type can in the middle (usually half full of beer or other carbonated beverage). This makes for super moist birds. If beer is used, we call 'em 'drunk chickens'!

those chickens look amazing. we will have to try that out, we always it pasture raised chicken, sadly there isnt that local that does it here and it comes from a frankly amazing farm which is about an hour away, (where I live in the UK its more veggie and grain farming, few cows). As I am getting older I am getting more and more concerned about my meat. one day someone said to me 'where are all the chickens?' it blow my mind, when I traveled (abroad) I saw chickens on the streets in gardens whatever. Here i dont think ive ever seen a chicken in a field. we see cows, pigs and sheep but never chickens. That one comment throw me down a rabbit whole of pasture raised meat and growing my own eggs! any ways, its meat that I am proud of and thanks so much for showing me why I am. We (my partner, my daughter and I) never miss a video and are going back to each old ones! love your videos really make us smile.
Hmm, but the charcoal won't stay hot that long. I think they are hot for about one hour. May be I'm doing something wrong... Your chicken looks great. Makes me hungry. Will try your sauce too. Thank you for sharing

we recently started grilling our homegrown chickens using this method and it really does work great pete!

The Ithaca chicken sauce is very close to Alabama white sauce which is a mayo and vinegar base. Though vegetable oil and an egg is almost mayo.

Use a chimney starter, and lump charcoal. You can have it standing byas you need it.
