Wonderful recipes!! On the stuffed mushrooms I ended up squeezing fresh lemon juice into the parsley mixture and adding a little salt. This really improved the flavor!! Keep up the great work. I really love your recipes.

My mother used to stuff mushrooms like that, but she always chopped the stems and added them to the filling. Besides being delish, it seems like a complete waste NOT to!

It's unusual you wash the mushrooms as the the norm is just to brush off the dirt since mushrooms are super absorbent and can easily become water logged. These tapas look delicious, especially being vegan. I'll definitely look forward to making these and have a fun, lockdown tapas evening with my housemate. Many thanks.
That's not true. Alton Brown did a test to see how much water will be absorbed from soaking mushrooms in water. They don't absorb much water some simply washing them under water will not cause them to absorb much water.

Very nice vegan recipes. We have a similar recipe to making vegan fried eggplant, only thing we make a batter with ground yellow split peas and flour to coat it with before frying.

I’m so totally into Spanish culture! Lol Since I found out I am of Spaniard descent on both sides of my family. 😂😂😂 I can’t eat potatoes though. I’d have to substitute it with a grain or some other veggie. ♥️♥️♥️ No potatoes. No rice. No noodles.

I'm neither vegan nor Spanish, but I am super excited about the tofu and olive skewers! I know that the texture of tofu is a divisive issue, but I love it, and I adore olives. I'm going to make that tapas for lunch often, but I think I'll do it with a heavily seasoned aioli dip, maybe smoked paprika? Maybe something woodier, like oregano? It's hard to go wrong with olives and red peppers for flavor.

yes the olive oil I used is cold pressed extra virgin olive oil, In Spain we use to it to cook and for dressings :) much love

I love all these dishes! Are the eggplant slices cooked enough so that they’re creamy, not rubbery inside? Could you bake them after brushing with oil, to cut the calories a little?
The texture of the eggplants where spot on, yes you can bake them, through they will have a different texture :) much love

Have you ever frozen, then thawed tofu? It changes the texture to a more dense meaty feel.

Is smoke paprika the same as sweet paprika? Where can I purchase sweet paprika?

Are Yukon Gold potatoes a common type in Spain or is it called something else there? U don’t see common US potato types here in Norway, but maybe some types have different names here? Curious... ☺️

There are some ingredients I will Never use, Thats Tin Tomatos High riks of Cancer, Egplants distroy,s your Pinel Gland and Tofu just Don,t like It.
I Love your recepy,s and I will replace the Tin Tomato,s for fresh, your Eggplant for courgette and your Tofu for Falafel. The Falafel is an complete other Taste but lets try something different. Thank you for showing us those lovely dishes.
