  • Like anything, sausage is great...until it's not. Eat too much of it, like, say, sample 14 different brands all in one sitting, and you're in for some digestive distress. Yet for the carnivorous among us, it's hard to pass up. It's just too tasty!
Well, we tried to head off the unpleasant experience of sampling too many sausages at once for you. While we acknowledge that, yes, there are far more than 14 popular brands of sausage, and there are plenty more varieties of sausage beyond that, hopefully this sampling will drive you to only the best stuff out there. Here are 14 popular sausage brands, ranked from worst to best.

When I was a boy I lived in Brooklyn, NY. We were in the Italian section of Bushwick and we got our sausage from the pork store and some small groceries or delicatessens. No brand names. Two blocks up was where the Germans lived in Queens. There was also a small chain of stores called Trunz where they had about 50 kinds of sausages and wursts.
Sometimes my mother didn't cook and we'd have sandwiches and salads for lunch. I'd go to Trunz and pick 1/4 selection of various wursts. Bloodwurst, Liverwurst, etc. Also potato salad, Cole slaw, macaroni salad, beets onion salad. Sometimes she'd make all the salads on Saturday herself.
Italian sausages were for dinner, sometimes with spaghetti, sometimes with a green salad and home fries. No matter where you went Italian sausages tasted the same. I really miss the skinny fennel sausage. They'd wind into a wheel and put two wooden skewers in it to hold it together. You put into the broiler turn it once and it was dinner. That was mostly a summer meal. same with the cold cut suppers. The rest of the year we got spaghetti 3-4 times a week, always on Sunday the pot the pot had sausages, meat balls, chicken, even quartered potatoes. Pork Neck bones were used to sweeten the gravy (sauce to you Medigane) Sometimes we'd have lasagna.
My mother made stews and soups. She got 3 meals out of one chicken. She had to, there were 8 kids to feed. We also had American fare. We we are a family of diverse ethnic groups. My first ancestor got off the boat rom the Netherlands 395 years ago this year. Welsh Rarebit, Scottish creamed hard boiled eggs on toast, Sauerbraten, red cabbage and potato balls. It was a time when mothers taught their daughters how to cook and manage a household. Gone forever.
Sometimes I'd take the train to Jamaica Avenue to the Polish section for Kielbasa, and Galumpkes(stuffed cabbage) and perogies.
The 1940s and 1950s weren't all bad. We ate well and pleasures were simple and didn't cost an arm and a leg. The cities weren't as dangerous and you felt at home in your ethnic enclave.

You are right about adding pork neck bones to sauce. I bake them in the oven first, then add a small amount of water, then scrap the pan to get the goodness, Then add the bones and broth to the sauce (gravy),
Neck bones used to be dirt cheap in the 40's and 50's. Not anymore.

That's the issue with the "popular" brands. They are usually too processed and/or taste bland. I would love to see a local brand competition pitting lesser-known brands against these. One such sausage here in Alabama is Conecuh sausage from Conecuh County. It's by far the best sausage I've had and it's gotten extremely popular in the South even in Louisiana, where sausage in gumbo is a priority.

  • @Garth2011
    @Garth2011 Před 2 lety +4

Very true with those "store brands" items. We have always been loyal brand minded for decades however, it seems that many of those famous everyday brands do not appreciate their loyal customers especially in the past 15 years or so. Why? They have been changing their packaging from say 16 oz or 1 lb packages to 12 oz (25% less) yet keeping the price the same. Many brands have changed their containers from 64 oz or 1/2 gallon to 58 ounces (less by 6 ounces) and again keeping the price the same. Mayo was one of the first to change their containers from 32 ounces to 30 ounces while raising the price to what it is today, $4.49 when it had been $2.49 for 32 ounces not that many years ago.
As a result, we have been experimenting with store brands and have found that most of the mayo brands out there just do not compare to Best Foods, our favorite. We tried them all and they don't come close although Dukes brand does but its about double the cost. Then we thought to try the Walmart great value brand and it tastes no different than Best Foods. Not only that, the price is half of Best Foods so we made the change and do not regret it.
Sausage is best made with pork...Jimmy Dean still rules in our kitchen. Farmer John still makes some awesome pork links too.

  • @nighthawkpredatorwotblitzclanr

For Italian dishes or sausage and potatoes I use Johnsonville hot sausage or sweet sausage. We have a great local sausage called Uncle John's Pride. It comes in regular smoked or hot smoked. I apprenticed under and old German sausage maker back in the late 1970s, I made untold tons of different sausage varieties in small batches (50 to 300 lb. batches) in the 10 years I did it before moving on to other aspects in the meat industry.
While not completely fair to compare sausages of different varieties or types, say a fresh vs. a smoked product, or a Italian against a pepperjack, you can still get a feel for most sausage brands by one of their varieties. Of all the many brands I have tried over the years, Johnsonville is my favorite by far, their whole product line, from fresh italian to their summer sausages are excellent. Their fresh italians and bratwursts have just the right balance of meat/fat/seasoning.
Only bother reading the rest if you're some kind of sausage freak.
I have never tried Hemplers, New Style Co., Tyson, Evergood, or Dibrova. Of them, only the New York Sausage Co fresh italian looks like something that may be good, as for the fennel that they say being an "acquired taste", fennel is what give sweet italian it's sweetness, most good italian/american owned pizza places put fennel in their sausage, also there is minimal water in it.
I'm no big fan of chicken sausage, chicken (especially the Cornish Cross breed that they all use), really doesn't have any real flavor, they are completely neutral tasting. I really have a dislike for companies that add chicken and or turkey to their pork, it is done strictly to reduce production costs, also stay away from the ones loaded with binder and water, binder has it's uses in summer sausage types and in certain smoked sausages, but the way they are over used in some these cheaper sausages is completely for bigger profits, you can make big money when you sell 10s of thousands of pounds of water at $4.99 a lb.
This video get's it right about Boar's Head, they were pretty good many years ago, but they went national and real cheapened the quality. What they ARE good at, is marketing their extensive line of products as "premium", when in fact, the only thing premium about their mediocre products is the price.
Aidells is well made, with quality ingredients without added water, but again, it's a sausage made from chicken, they don't taste anything like the traditional sausages they're named after.

My favorite so far in recent times has to be Aidells - Hawaiian Bacon Chicken sausage. Seriously, it's very tasty and the pineapple isn't too strong, it's just enough to give it a subtle sweet taste. A VERY close second would be Aldi's Never Any - Apple Chicken sausage. Not only is the flavor really good, not even Aidells apple chicken sausage can match it in my opinion, and Aldi's is a lot cheaper. This isn't just "bang for the buck" speaking, it's actually just really really good sausage!

Are you sure? #2 has so little flavor and terrible texture. I've never heard of #1, it must be AWEFUL! I've always thought Johnsonville and Bob Evans were the best sausages ( my butcher takes creative liberties and blueberries don't belong). Wait, was this a best or worst list?......

SE Michigan is the mecca for sausage lovers. Growing up when didn't have national brands because they could not meet our meat packing standards. The laws changed, however three Michigan based meat Packers are still in business and have a very faithful following.. what's the difference? Michigan meat packing standards require that all meats used must come from the carcass. So know scraps or what was once on a hoof.. no by products.. we have the very best sausages and hot dogs! Even if it has chicken it can't be "mechanically separated".. but the big three are Kawolski that's in Hamtramck, (they make other stuff too and everything is great) they are my favorite hot dog, their holiday sausage is a traditional polish treat, it's ground courser than traditional Kiàblasa, both of those are great and they also make a white brats . Then there is Koegles in Flint.. a lot of people like their hot dogs . Their hot dogs have paprika.. they make a really good garlic ring baloney.. and Dearborn, they make a perogies, both types of hot dogs like the others.. most of the hot dog stands around here use the casing hot dogs.. there all good! And then we still have local meat butchers who make their own stuff.. growing up they were everywhere but now it's just a handful..
But Dearborn, Kawalski and Keogles are at any major store.. maybe not Walmart but Kroger.. Kroger sometimes has Kawalski potato salad and you cannot buy a better potato salad..
So do a show on Michigan Meat Packers!! And why our selection fabulous for meat lovers!

Best sausage are the mild or semi mild German variaties...esp. the Weiss Wurst (Germany rules in the sausage world IMHO) Very much like a breakfast sausage...followed closely by the mild or hot Italian sausage used in sausage and sweet pepper hoagies...but they need to use fennel sparingly (not a big fan). Texas hot links (the small ones) are an honorable mention and can often be found at BBQ joints.. For grins and giggles, the Virginia Hot Sausage Links are a very occassional treat. (Lots of red dye...tasty w/ yellow mustard and sweet relish......but keep the Tums nearby
