    I made these videos to document my experience eating a diet termed the “Lion Diet” by Mikhaila Peterson, daughter of Jordan Peterson who introduced this diet to my thinking. Lion Diet a strict version of the Carnivore diet that only allows for ruminant meat, salt, and water.       I don't know if you have time to answer questions but here goes... have you had enough discussions with others on lion diet to guage the most common reason they do it? (More specific than health in general) I do this for mood control and wonder how many others have that primary reason.

    I can't tell you how much I appreciate you making these videos and sharing your journey to health. Each person is an individual and the thing that works for one doesn't always work for another. People have been telling me all my life what I should eat and how and when, but I am the only one that knows what works for me. I am still on my water-only fast to kick-start my lion diet. I have been mostly Carnivore for the past almost three years, so I understand what is before me when I end this water-fast. Right now, it's just de-tox and dropping a bit of weight to get to a healthier state of being.

      @@ryanthepianoman27 What do I eat on a fast?... Water only... just Britta filtered tap water... I did 16 days that time so it was a short fast, but I would like to do a longer one soon...

I will say that if you’re buying a beef from Miles at Big Mo, ask about the other processors he uses. Johnston’s dropped the ball on my last two cut orders. The beef is still the best though 😎👍🏽

    I’ve been seeing more & more keto/carnivores talk about getting their own cow. It’s so interesting to hear the process from farm to freezer. I especially loved your ride through the ranchers field & him explaining the look of the cow & where the cuts were located. Thank you Dante for thinking to video this conversation. It found it extremely interesting & educational. I have several farms in town who sell their beef. When I can afford it, I now know what to ask and how to get my cuts (BTW: mom made tongue when we were kids. She tried to pass it off as smoked butt. Lol! It was delicious)

    My father made cow tongue every New Years Eve. I was the only one of the kids that would eat it with him. Loved it!

    Definitely get some Chuck Roasts. My son taught me how to cook them by searing in a cast iron skillet and then finishing in the crockpot or instant pot. Sometimes they are called the poor man’s Ribeye. You can also sear them on the BBQ.

    Hi Dante, great video. I cooked my first chuck roast last week, low and slow and I LOVE the flavour. I have always cooked rib roasts but I prefer the flavour of the chuck now. For the two of us, we eat the roast sliced thin all week long! I watched someone on CZcams use a sous vide to cook 1.5 inch chuck steak and then sear it at the end and it looked like the best rib fillet steak ever. Cheers

    Dont miss out on beef ribs ! You can boil them for 30+ mins and the slap them on the grill or slow roast them.

    Wow, awesome video. I loved this.. Now here down in deepest, darkest South Africa, the farmers sell direct, if you know the contacts. There is no middle man, just straight from farm to table. I just ordered me a lamb, then I give instructions on how I want my lamb cut. Unfortunately, we don't get the organs, tongue or tail, but just the trimmed carcass meat. So I order whole shoulders, whole shanks and whole legs, as well as whole ribs for BBQ, roast or slow cooking. The rest comes in cutlets and Stewing meat. Nothing puts a smile on my dial like the day I receive my fresh meat and I pack away in my freezer. Or lamb is super soft, super delicious and raised on the grasses and herby bushes that grow in the fields here. Nothing compares to it. Sometimes, I can smell what that lamb been eating when I pack it away. A lovely fragrance. 3 sets of dog eyes follow my progress as I trim fat for rendering and the odd piece of trim gets thrown their way.

    This is a really good video, u do a great job bringing the content. Anthony Pompliano did an interview with a guy from the beef initiative. It was called "watch this before going to the grocery store." Very interesting also and all about sourcing your own meat.

    Dante if you watch Gordon Ramsay or Alton Brown vlogs on 'how to cook' various parts of the beef they'll give you all sorts of the inside story. Why, how come stories. You don't have to season as they might. Sticking to your salt will be fine. But they'll give you the timing and temperatures for the perfect tasting cuts of beef

    I recommend not taking the meat off the oxtail and grinding it. Leave it on and braise it in a crockpot or in a Dutch oven. It's amazing.

    I may have missed this but do you have to buy the cow from the farmer, then pay the processor for the butchering and prepping?

      Depends on the arrangement they have. So far I’ve only put money down by writing a check to the rancher. I’ll cover the overall process once I pick up the cow, but I still have a few weeks to get to that point. You’re going thru this with me in real time 😎👍🏽

    Interesting. I think a lot of us city folks are really out of touch with our food. No idea where on the animal a particular cut of meat comes from. As if the meat just magically grows in the styrofoam supermarket packets.

    When I buy my meat on sale and sometimes it will be like the London Broil Steaks.. what I do is ask the Butcher to run it through the tenderizer machine 2 times kinda like a Chicken Fried Steak and they cook just as tender as a Ribeye but 50% less the cost.

    Their website says the animal is grain-fed the last 4 months, so be aware of this--might taste better and be cheaper, but not as healthy as 100% grass fed/grass finished!

      Johnston’s is just a processor for the cows I buy from Miles at Big Mo Cattle, I don’t buy the meat they sell on their shelves. I can see the difference when I pick it up. The fat on properly raised grass fed beef is yellow not white.

Is there anything you would change on the cut list for your order now that you have more experience in ordering a cow? (change in cuts, change in grind, additional instructions for butcher?)       Not really except for maybe thicker steaks now. I’d like an inch and a half instead of an inch and a quarter. At first, I was disappointed with the quantity of hamburger meat, but the hamburger meat is so good, I am not disappointed at all now.

      You'll eat it eventually. The question is if you can afford not to? I can't imagine how much money and health I wasted on snacks, junk foods and stuff that just went bad on me.

      It was $3.1k with processing. I can’t remember the hanging weight but it was between 600 and 700 lbs.

      Is that what that meant? I thought he was meaning 50-60 of the meat would be processed as ground beef.

      That's how I took it. I think he wants a very minimal trim of fat, and he was basically saying that would end up 50-60%. Maybe I misunderstood
