    CHICHARRÓN EN SALSA VERDE: Pour lard into a hot cauldron, then add salsa verde. Break pieces of chicharrón into pot and allow it to simmer for 15 minutes. Serve while hot.
    FRIJOLES REFRITO CON HUEVO: In a skillet, add oil. Add refried beans and eggs. Fold into an omelette shape and serve on a plate.

      @@ski-yq9ur As stated, he was based in Vietnam. He came to the US with his wife and Calvin a couple months ago so that he could continue filming. AFAIK, Vietnam is still taking lockdown seriously and filming (and getting vaccinated) is much easier over in the states.

      Hell there are even recipes that are made around the colors of the mexican flag, like chile relleno, comes from green in the chile, red on the sauce, white cream on top and then topped with black garnish to emulate the coat of arms lol

    Important to note pozole is made completely differently in different parts of Mexico. Such as that pozole looks nowhere near what I would consider pozole

      True!!! Main pozoles are green and red, but depending on the region they may have different ingredients.
      They should all have some meat and corn though.

      Yes, we eat the red one too. The crema is also a DF (Mexico City) tradition. My Pastors are from Mexico City and they eat their posole with tostadas and sour cream with queso. When I went to Michoacán to see my mothers family in Mexico they looked at me weird because I was eating my tostada with sour cream (crema). They ended up trying it and liking it.

      we have similar thing but much more simpler /no fancy avocado etc..names Fasole {Romania }you can make it stew like or soup like or almost spreadable like ..is just beans onions some tomato/tomato paste carrot and pepper(the vegetable).and condiments to your liking .its really good .you can fry some sausages / bacon.etc to eat beside it and most people eat it with pickled vegetables

    Mexican food is the science of throwing everything in the pot and retaining the genuine flavor of every ingredient. From the most humble to the most prestigious it is incredible how much preparation and detail goes into every dish it's the most under rated complex cuisine in the entire world. Thanks sonny

      I think the preparation and knowledge of how to do the nixtamal, the peeling of the walnuts, preparation of the corn for hominy is the important part. Then just throw it all in a pot of lard, on a comal, for a boil is easy.

      You know it became viral a while ago how policemen convinced a suicidal man from stepping off a bridge by inviting him to eat tacos with them. 🤭 Food is extremely close to our hearts. With globalization, nowadays things have faded for some within the newer generations, but as a young mom myself and remembering what my.own grandma's used to do etc.. it's a very Mexican thing to show our love specially through food.
      We don't really care if the dish is complicated, we will do it for our loved ones. If a Mexican invites you to eat food they made from scratch, then you should know they care about you a lot. If they propose inviting you out to eat, without having to do it (as it happens when discussing business) just to eat, then you're considered their friend. That's the way we want you to have a good time.

      @@orangejuice393 So True I had this experience while attempting to make Horchata at home. My friend convinced me to have some at a party.. it's just a sweet rice drink he said. I was hooked instantly! Foolishly I thought this should be easy rice water sugar lil bit of cinnamon.. easy done I choked on my creation it was awful. I persisted so I volunteered to help cook in an effort to gain the knowledge of the Horchata for myself. The Horchata I gulped down so eagerly literally had dozens of ingredients and took HOURS to prepare. I was defeated; Today, I just buy my Horchata by the cupful from small family run restaurants which often do make really good Horchata but still not quite as good as one you might be served at a family gathering. @Orange Juice you're really awesome.     Hi, I'm Korean and I watched this video really incidentally.
    After watching this video, I thought some of food culture between our Korea and Mexico is pretty similar and it made me really want to try.
    Surely, I could eat few Mexican food in here too, like Taco or Britto, and I like them, but I want to try real native one.
    During watching this video, I felt Mexican foods emphasizing harmonization between several things and it made me to think it's similar to Korean foods.
    Korean Bibimbop can be a good example, after cooking, it looks like just.. mixed something.. but if you know, there are various ingredients inside it and each of them cheer together. And Salsa Verde is too, it looks like just a green sauce after cooked, but various foods, cultures, even thoughts are inside, and those make some harmonization.
    One more thing that made me surprised is also each process to cook is very complicated.
    Also I think it's real good benefit there are more various ingredients in Mexico.
    All foods looks tasty and I think this channel does real great.
    Every contents of videos is well prepared and professional even easy to understand.

      No es que sean diferentes, es que hay variedades, sazones distintos y formas distintas de hacer cada cosa, es por eso que no hay tradicionalmente un platillo como tal al pie de la letra, en cada rincón es totalmente diferente, y deja tu eso, luego están los restaurantes de personas que hacen sus otras versiones y luego están las cocinas fusiones, es muchoooo que procesar, así que realmente ellos van por lo que este justamente en la calle, lugares concurridos y realmente comida que se suele comer bastante en el pais y son conocidos, ya que al igual que hay tantos platillos, incluso existen platillos que no son tan populares en el pais, pero tienen historia detrás, como los Papadzules, no es muy típico, pero existe, incluso muchas bebidas que no son tan populares y son alcohólicas y tienen denominaciones de origen como la Raicilla o el Sotol.

    One thing that she forgot to mention is that there's actually three types of pozole white green and red each one is a bit different but the same concept and not all the time do you eat pozole like she did it really varies on which one you are eating.
    Green pozole: I'd say that's how you eat it the way you did with chicharron the
    White pozole: could be less spicy but you normally put cilantro white onions cabbage instead of lettuce and fresh chillies to give it that extra kick
    Red pozole: is made out of a red broth and it's just like the green one but normally you put the tostadas in it instead of chicaron including the classic toppings of white onions lettuce and freshly cut radishes.
    This is how there commonly eaten but Mexico's a big country so a lot of people might eat them differently or they could be eating them the same way for all three.
    Another thing that she got wrong is that the Aztecs didn't have chickens they had turkeys and dogs chickens came from European settlers

    Let me tell you one thing, if you love Mexican food, NEVER EVER mention taco bell and Mexican food in the same sentence, that is disrespectful to Mexican food.       I love how his sarcastic personality just DOES NOT jive there. I don't know much about the humor of the average Mexican but watching them either be totally confused or it just flying over them while Sonny sits there waiting for a response only to just get countless scenes where they could play the cricket sound effect is just👌. I mean he's definitely got that in other countries as well but it seemed like he was literally dying inside because not a single joke was landing.

    I went to cozumel as a kid and have also been to Belize. They were two of the most beautiful places I have ever visited. Amazing food as well. You should check them out sometime

    The seafood/tropical fruit/corn cuisine I had in Villahermosa was some of the most delicious food I have ever eaten in over 60 years. The Campeche bay shrimp are the sweetest - jaw dropping.

    In Puerto Rico we have a version of pancita called mondongo. Ours is much milder but still flavorful. We usually add garbanzos (chickpeas) to our mondongo. We eat it with white rice and tostones (fried smashed green plantain)

    I'm glad to see you tackling the wonders of Mexican cuisine! I dated a Mexican guy for about 3yrs & his mom could throw down in the kitchen. I thought I knew what Mexican food was prior to that, but boy oh boy was I wrong! Now a days I cannot eat at normal Americanized Mexican restaurants, b/c once you've had the real stuff you'll never want the "fake" stuff ever again. If more Americans had a chance to taste real Mexican flavors, I know for a fact that Americanized Mexican food would become less popular. We have so many "Mexican" restaurants in the U.S. that don't even serve soft corn tortillas, let alone all the other delicious stuff, it's such a waste of opportunities to serve something authentic to the masses.
    Edit: I've always wondered how chicharones are made, I'm so glad you showed us!

      You're absolutely right!!!! I've gone to the US before and I love the food there because I'm used to Mexican food and it's a refreshing change, also very delicious, but when I've tried going into "Mexican" restaurants... They are all off.

      @@orangejuice393 I keep seeing this but something that is never address within in our community is actual Mexican restaurant. In Chicago near Clark str. There is a line of restaurants on the street that have been closing and opening with constant "new" owners all Mexican owned. Food has been terrible and when new people come to try it, they think this is Mexican food, it's a constant issue I keep seeing with restaurants
