Why didn’t Jedi’s turn off their lightsabers in combat?

There were a surplus of Jedi combat techniques throughout Star Wars history. But why did the Jedi never turn off their lightsaber during combat to trick the enemy or avoid contact with their blade? Actually, it might happen more than you think!

It would be less risky if using two lightsaber technique…
You could try it with your attacking sabre while keeping your defensive sabre continuously on, or just keep the second sabre in a closer guard in case you stuff up (or your opponent is able to exploit) with the on/off sabre.

Honestly in Clone Wars, the Sideous VS Maul fight I wanted to see Sideous pull this move off to injure either Maul or the other one. It seems somewhat underhanded to turn the Saber off for a split second to avoid being blocked

Isn't it just a switch? Why not add a secondary switch that auto shuts it off for half a second?

There are four core techniques to trakata, pass blade, flash slash, unbalancing block and one more that i forget. But those four techniques could be applied to almost any fighting style with ridiculous success rates. Trakata is less of a full style and more of a set of combat principles designed to abuse lightsaber mechanics. As evidenced by the fact that most “trakata users” are actually either jar’kai or ataru uses that just employ some trakata techniques.
