Meat in stews wasn't browned in your grandmothers day. It was boiled from cold. The stewing steak in proper Scouse is also boiled - and it's been that way forever. You are colouring that meat for "presentation." Do you think anyone was arsed about presentation in them days? Stop lying.
Lancashire hotpot is made of scrag end of lamb cut into chops and layered with onions and thinly sliced potatoes... It's food of the gods....
