The NLP Standford Course you suggested doesn't cover Spacy, Lemmetization,Tokanization, and more importantly code, but it is a good academic tour where they explore the best methods in NLP and you have so much to Process in the way they teach, but when we look in real time NLP boils down to basics as the models like BERT and GPT are computationally expensive.. , if you use BERT and GPT you might wanna use regex and other NLP basics to modify text by removing stop words and all that, so I started looking for good resume parser that extract text from resumes for my project ,and then i saw which are important skills in NLP. Some text can be extracted using dependency parsers(vocab), some are best extracted with context, Combination of these both and regex made my project. Some times Acadmic course will make me lose interest đ, we should atleast make our hands dirty with all these topics before listening that standford classes, or else we lose interest and we never know where to pay attention.

I can help you with that , I too have no mathmatics background and I would suggest the path is not easy firstly u should go through maths of 9th and 10th if u feel comfortable with this then you can move to maths of class 11th and then 12th I would suggest watch videos of Rohit Solanki sir (best for NCERT) will definitely help you alot . Don't skip chapters it would be better to understand every chapter of 11th and 12th maths will help you understand concept . Don't give up keep going
