Lemon and blackberry vol au vents, never thought to make a sweet one of those before, gonna have to give it a go now
I totally missed the whole demo on the puff pastry cuz his "Pepperidge Parms" joke had me laughing so hard I couldn't pay attention. Funny Chef John. FYI, you could have simply docked the middle of the dough before baking it. That would eliminate the center cutting step. Docking is essentially poking the pastry with a fork to ensure it does not puff. You will end up with a perfect little puff pastry cup.

if you go slow, you can make these canned biscuits in a microwave! The trick is to get it to 'bake' without burning as the heat is being transferred directly into the dough instead of the entire cavity of the oven.
