Panera Bread (St Louis Bread Co) actually gives away their leftover bread every night to organizations that hand it out to their community. My dads church used to collect the bread and hand it out. Sweets were included. They make it all fresh every day.
Almost like flan!! 4 eggs, Condensed sweet milk 1 can, Evaporated milk 1 can and vanilla one teaspoon. Put in a blender. Make the caramel the same way about 1 cup of white sugar stirring constantly don’t let it get too dark or it will get bitter. Pour in a container and pour in the custard mixture on top of the caramel. Cover and put in warm water in a larger container and put the smaller container with the custard inside the water bath. Bake for 50 to and hour on 350F. You can put in just a bit of soft cream cheese in the blender with the custard mixture and it will come out almost like a cheese cake. Cool in the fridge over night. Put a big plate on top and turn over carefully and the caramel will be on top of the Flan. Don’t cut or turn hot or it will break and separate. Love it.Easy to make.Try it out.

My dad who lived through the Depression would get up late at night because he couldn't sleep so I'd hear him and go to the kitchen where he would take stale loaf bread, break it into chunks, put it in a glass, sprinkle sugar on it, and then pour cold milk over it. To this day some 64 years later I still do it and still love it. Thanks dad, your the best!
This is "Pudim de Pão", or Bread Pudding. Very common in Brazil. Not only bakeries make it but we make it in our houses too. And there are variations, you can add coconut, ir corn, or cinnamon... We Brazilians LOVE it!

They give it away to food banks or their employees. It's just not worth the time and effort to make a more expensive product that clearly doesn't keep well.
I've also heard some artisan bakeries will make bread crumbs out of old bread and sell those too. Honestly, win-win both ways as long as it doesn't get thrown away.
Having worked with bakeries, I can say that they did not use old bread for anything and would donate it out or throw it out. I on the other hand would cube it up and soak in a custard mix, (cream, milk, cinnamon, vanilla eggs, sugar) and bake it and it tastes like sweet French Toast.

Most bread gets thrown out and sometimes if available given to animal keeping places to feed to the animals but people be ware if you feed animals bread make sure its fully dehydrated! The moisture can create infections and make the animals really sick and even kill them if unfortunate enough also don't feed animals tomuch bread since our breads contain sugar which is not the best to keep feeding animals over and over daily this can easily get them too fat for their own good so make sure they get a balanced diet!

I suspect a bread soup would be tastier than this. I have made it several times with old bread, works great. Or soak them in milk and eggs and fry them in a pan with some butter. Then add some cinnamon sugar to it and eat it with apple compote.

I work in a bakery. We just put the stale bread on the discount rack and then (if it still doesn't sell) make the stale bread into breadcrumbs. If we don't need a ton of breadcrumbs (no holidays coming up) we give it to staff or the food security. We are not getting paid to turn it into whatever the heck this is. Now you know all the bakery secrets.
The thing is… This person took this recipe from Brazilian food content creators and just translated it to English (which seems to be pretty profitable since the number of likes on this), and this is the reality in most of the Brazilian Bakeries (so called Padarias). In the other hand a truly and good pudding store in Brazil wouldn’t never sell anything like this since the “gourmet” version of the Brazilian pudding only takes Condensed Milk (mainly Leite Moça), Milk and Egg Yolks.
They definitely make bread puddings or something like this with some of their bread and still throw a ton out. They make iced coffee at bagel stores by throwing all the leftover hot coffee into a pitcher so that's usually up to a week old too.

As a born and raised Southern man, we don't "blend" bread. We dice it, add milk, cinnamon, nutmeg, butter, eggs, vanilla, brown sugar, and sometimes raisins, pecans and/or a little molasses, stir until well blended, pour it into a 13x9 pan, cook it in a water bath covered for 45, uncovered another 10... Then proceed to making either a good bourbon sauce or a good rum sauce, to pour over the top when served. It's called Bread Pudding. What you made looks more like flan. Just saying...

bread pudding. no secret there. Instead of 3 cans of condensed milk, use one can each of condensed, evaporated and coconut milk, add raisins, ground cinnamon and a can of fruit coctail and you will be in dessert heaven!

If you want to use stale bread, you can also make french toast. in french, it's called "pain perdu" or "lost bread" which highlights the fact it's supposed to be made from stale bread which would otherwise be lost.
Stale bread makes the best French toast, if the breads fresh its too soggy. I sometimes put bread in the toaster 1st if I don't have stale bread for French toast

I work in a bakery. We just put the stale bread on the discount rack and then (if it still doesn't sell) make the stale bread into breadcrumbs. If we don't need a ton of breadcrumbs (no holidays coming up) we give it to staff or the food security.
We are not getting paid to turn it into whatever the heck this is.

The thing is… This person took this recipe from Brazilian food content creators and just translated it to English (which seems to be pretty profitable since the number of likes on this), and this is the reality in most of the Brazilian Bakeries (so called Padarias). In the other hand a truly and good pudding store in Brazil wouldn’t never sell anything like this since the “gourmet” version of the Brazilian pudding only takes Condensed Milk (mainly Leite Moça), Milk and Egg Yolks.

They definitely make bread puddings or something like this with some of their bread and still throw a ton out. They make iced coffee at bagel stores by throwing all the leftover hot coffee into a pitcher so that's usually up to a week old too.

As a born and raised Southern man, we don't "blend" bread. We dice it, add milk, cinnamon, nutmeg, butter, eggs, vanilla, brown sugar, and sometimes raisins, pecans and/or a little molasses, stir until well blended, pour it into a 13x9 pan, cook it in a water bath covered for 45, uncovered another 10... Then proceed to making either a good bourbon sauce or a good rum sauce, to pour over the top when served.
It's called Bread Pudding. What you made looks more like flan.

I've worked in 3 bakeries. We pulled most of the bread 2 days before use by and donated to food banks. Anything else was cubed up, dried in the oven and bagged for stuffing bread
